SANDRA'S HOMEMADE MILD SWEET ITALIAN MOOSE SAUSAGE

It's imperative to let the flavors meld for a minimum of 12 hours
prior to cooking
this wonderful moose sausage...

Yield: Four 2-1/2 lb. portions (total of 2 lbs.)
Prep: 20 Mins.
Cook Patties: 3-4 Mins per side (7-8 Mins total)
Meld Flavors: 12 hours

INGREDIENTS

2 pounds lean ground moose (venison or other meats and poultry work well too)
1 tablespoon red wine vinegar
1 teaspoon dried parsley
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried basil
1 teaspoon kosher salt
1/2 teaspoon fine-ground black pepper
1/2 teaspoon paprika
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon ground fennel seed
--(crush whole seeds in a mortar and pestle or spice grinder)
¼ teaspoon brown sugar
⅛ teaspoon dried oregano
⅛ teaspoon dried thyme

METHOD

Place ground moose and red wine vinegar in the bowl of a food processor, sprinkle with parsley, garlic powder, onion powder, basil, salt, black pepper, paprika, red pepper flakes, fennel seed, brown sugar, oregano, and thyme. Gently pulse until flecks of spice are evenly distributed throughout meat (scraping down sides as needed).

Form mixture into four 3-inch squares (1/2 lb. ea.), double-wrap each in plastic wrap, label, and date. Refrigerate for at least 12 hours before cooking, or freeze* directly.

To cook thawed sausage, heat a large skillet over medium heat. Form mixture into 3" patties that are 1/2" thick.  Working in batches, cook sausage patties in the hot skillet until no longer pink in the center, about 3-4 minutes per side. An instant-read thermometer inserted into the center should read 160F.

TIP:
*You can freeze the sausage if desired - when ready to use, pull out of freezer and thaw in refrigerator overnight then continue to prepare as stated above.

Here is the frozen version
(made yesterday and froze overnight)

SANDRA'S STRAWBERRY-RHUBARB BUNDT CAKE with BUTTERCREAM FROSTING

A cake you will probably want to prepare 'yearly' when
rhubarb and strawberries
 are in season
that your family is bound to love...

Prep: 25 Mins.
Bake: 65 to 70 Mins.
Yields: (1) Bundt Cake| 12-16 Servings

INGREDIENTS

Wet:
3 large eggs
1/2 cup canola oil
2 cups granulated sugar
*2 (5.3-oz. containers) Chobani Peach 99% Greek yogurt - (Costco) = neutral flavor
3 teaspoons vanilla extract

Dry (Sifted through a sieve atop wet ingredients):
2-3/4 cups all-purpose flour
1-1/2 teaspoon baking soda
1/2 teaspoon double-acting baking powder, or regular
3 teaspoons ground cinnamon
1/2 teaspoon fine sea salt

Fold-in:
1 cup finely diced fresh rhubarb
1-1/2 cup chopped fresh strawberries (Alaska Wild, or domestic)

------

Buttercream Frosting:
2 cups sifted confectioners' sugar
1/3 cup room temp. cream cheese
1/4 cup room temp. salted butter
1 teaspoon vanilla extract
2 teaspoons 2% milk (more or less to your desired consistency)

METHOD

Preheat oven to 325 degrees (not 350 degrees or else the loaves will become too dry).  Prepare bundt pan by spraying it generously with baking spray; set aside.

In a mixing bowl of a stand mixer, add eggs and canola oil and beat on medium speed until light and foamy.  Add sugar, yogurt and vanilla extract; mix on medium speed until fully incorporated.

Place a sieve over wet ingredients in bowl, add all dry ingredients and sift over top of wet ingredients. Mix batter on low speed to begin incorporating dry ingredients, then on medium just until moistened (Try not to over-mix).

Using a large spatula, fold in "fold-in" ingredients above, just until combined while scraping edges and bottom of bowl.

Spoon batter evenly into prepared bundt pan, tap pan on a hard surface to release air bubbles and shake to it even out.

Bake for 65 to 70 minutes, just until a toothpick inserted in center of bundt cake comes out clean.

Remove bundt cake to a baking rack upright in pan and let cool for 10 minutes.  Turn out bundt cake from pan to rack so cake is dome-side up; cover with a clean kitchen towel, then allow cake to cool completely.

-----

Meanwhile, prepare frosting:

In a medium bowl, using a hand mixer. Place all the frosting ingredients into the bowl and start hand mixer on low speed, then increase to medium when ingredients are starting to incorporate. Turn mixer to high to fluff the frosting. Cover frosting with plastic wrap until ready to frost cake. Frost cake once it's fully cooled, and enjoy!

SANDRA'S WILD ALASKA BLUEBERRY STREUSEL MUFFINS from SCRATCH

While recently picking my first batch of Wild Alaska Blueberries from my front yard,
I decided to come up with a muffin recipe from scratch.

End result...these streusel topped muffins turned out absolutely fabulous!

Yields: (12)
Prep: 15 Mins.
Bake: 30-35 Mins.

INGREDIENTS

Berries
1 tablespoon all-purpose flour
1-1/2 cups fresh wild Alaska blueberries

Wet
1/2 cup unsalted butter, at room temperature
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/4 teaspoon lemon powder (or zest)
1/2 cup 2% milk

Dry
2 cups all-purpose flour
1-1/2 teaspoons double-acting baking powder (or regular)
1/2 teaspoon baking soda
1/2 teaspoon table salt

Streusel
2 tablespoons all-purpose flour
3 tablespoons granulated sugar
2 tablespoons brown sugar
1 teaspoon ground cinnamon
2 tablespoons cold, unsalted butter, diced

METHOD

Preheat oven to 350 degrees. Place 12 paper liners in regular-size muffin tin slots, then spray liners with baking spray; set aside.

In a small bowl, sprinkle 1 tablespoon of flour over blueberries, and swirl bowl to coat; set aside.

In a stand mixer bowl, beat 1/2 cups softened butter with 3/4 cup granulated sugar until light and fluffy. Beat in eggs, vanilla extract, and lemon zest and milk. Sift 2 cups flour, 1-1/2 teaspoons baking powder, 1/2 teaspoon baking soda, and 1/2 teaspoon table salt through a sieve over bowl of wet ingredients; mix on low just until combined. Remove bowl from mixer, and gently fold, using a spatula, the blueberries (shaking off excess flour beforehand), do not stir or over mix. Use an ice cream scoop to equally proportion batter into prepared muffin liners. Use the back of a spoon to even out tops.

Combine 2 tablespoons flour, 3 tablespoons granulated sugar, 2 tablespoons brown sugar, and 1 teaspoon cinnamon in a small bowl. Cut in 2 tablespoons cold butter with fork until mixture resembles course crumbs. Sprinkle equally on top of batter in muffin liners.

Bake in the preheated oven for 30 to 35 minutes, turning pan half way through baking, just until a toothpick inserted in center of a muffin comes out clean. Cool muffins in pan on a wire rack, just until cool enough to transfer to a serving platter.  ~ Enjoy!

Tip:

If using a large 6-cup muffin tin, be sure to increase baking time accordingly.

SANDRA'S ALASKAN MOOSE ROAST - PRIME RIB STYLE

A simplistic method using minimal spices and ingredients
to guarantee utmost flavor
of our prized Alaskan moose roasts; prime rib style, that is!

Servings: (8-10)
Prep: 5 Mins.
Roast:  1 Hr. 20 Mins.

INGREDIENTS

4 lb. boneless moose roast (tied with kitchen string)
6 fresh medium garlic cloves, sliced in half
Canola oil (sufficient amount to rub entire exterior of roast prior to seasoning)
Fresh ground black pepper (we like to use a lot!)
Kosher salt (a fairly nice dusting)

METHOD

Remove roast from refrigerator 1 hour prior to roasting (tie with kitchen string if not already done). Using a sharp boning knife, poke as many small holes all over uncooked roast to insert the number of garlic clove halves; push in holes. Let prepped roast sit at room temperature for 1 hour (this is an important step to relax meat fibers).

Meanwhile, preheat oven to 450 degrees for a minimum of 15 minutes.

Rub roast with canola oil, and season exterior with freshly ground black pepper and kosher salt.

Place roast fat-side up on roast rack inside a shallow-sided roasting pan. Insert a meat thermometer into middle of roast.

Roast uncovered at 450 degrees for 20 minutes.

After 20 minutes of high-heat cooking, reduce heat to 350 degrees and continue to roast for 1 hour, or until meat thermometer registers 135 degrees for medium rare doneness (temperature will increase while standing another 5 to 7 degrees).

When 135-degree internal temperature is achieved, remove roast to a carving board. Tent loosely with parchment paper then foil (do not let foil touch roast directly) and allow roast to rest (without cutting) for at least 20 or more minutes to allow inner juices to redistribute. ~ Enjoy!

~~~~~~~~~~~~~~~~~
Tips: Start checking internal roast temperature for a 3-lb roast (subtract appx. 15 minutes), or for a 5-lb roast (add appx. 15 minutes) of roasting time during the final 350-degree cooking time.
This method of roasting wild Alaskan game works well with venison (deer), caribou, beef., et. al...
SANDRA'S LIGHT ASIAN DIPPING SAUCE with WILD ALASKA PAN SEARED SCALLOPS
A terrific Light Asian Dipping Sauce I created while in Yakutat, Alaska
preparing a family dinner when I had minimal on-hand ingredients,
served as a first course with Pan Seared Wild Alaska Bay Scallops ~ Delish!
Serves: 4
Prep: 10 Mins.
Indoor Grill: 4 Mins.
INGREDIENTS
Light Asian Dipping Sauce:
1 tablespoon low-sodium Tamari (soy sauce)
1 tablespoon apple cider vinegar
1 teaspoon honey, more/less to your desired sweetness
2 tablespoons water
1/2 teaspoon ground ginger
Dash of garlic powder
Dash of onion powder
Dash of freshly ground black pepper
1 tablespoon minced fresh cilantro (measured after mincing)
Scallops:
2-1/2 lbs Wild Alaska Bay Scallops
METHOD
Whisk all dipping sauce ingredients in a small glass (non-reactive) bowl. Let flavors meld at room temperature for 10 minutes.
Meanwhile, rinse and pat scallops dry. Place on paper towel-lined baking dish. (Can be stored covered with plastic wrap in refrigerator for a few hours as such, although bring to room temperature for 20 minutes prior to searing.) Lightly pat tops of scallops one final time with paper towel prior to searing.
Preheat a dry cast iron grill-ribbed skillet over medium-high heat. Pan sear bay scallops for 1-2 minutes per side, depending upon size. (Larger scallops will take slightly longer to sear.) Do not overcook scallops or they'll become tough.
Place seared scallops on serving platter in a single layer with dipping sauce in a small, decorative bowl at the center, along with small dipping forks. ~ Enjoy!
~~~~~~~~~~~~~~~~~~~~~

Tips: Pan sear scallops in batches so as not to overcrowd pan, preventing steaming scallops. Also, if using larger sea scallops, cut them into quarters prior to searing.

SANDRA'S ALASKA WILD DUCK with SECRET SAUCE over STEAMED RICE

A wonderful Alaskan 'comfort food' recipe I created this evening
that consists of one Pintail and another Mallard duck.
~ Thanks to my husband! ~
We'll be looking forward to having this fine dinner again and again...

Servings: (8)
Prep: 30 Mins.
Cook: 1 Hr.

INGREDIENTS

1/4 lb bacon, cut into 1/2" strips, browned (retain grease and drippings)

4 Alaska wild duck breasts, brined (See below*)
= Must be brined 3 days prior
1/4 teaspoon freshly ground pepper
1/4 teaspoon granulated garlic
1/4 teaspoon granulated onion

Vegetables-herbs-spices:
2 cups sliced celery
1 cup chopped yellow onion
1/4 teaspoon dried sweet basil
1/8 teaspoon dried marjoram
1/8 teaspoon dried ground sage
1/2 teaspoon dried parsley
1/4 teaspoon granulated garlic
1/4 teaspoon granulated onion

1 tablespoon all-purpose flour

Sauce:
1 can cream of mushroom soup
1 pkg dry brown gravy mix
2 tablespoons white wine vinegar
3-4 cups water (depending on sauce consistency)
1 tablespoon worcestershire
1/8 teaspoon freshly ground pepper

1 dry bay leaf

--Prepared steamed rice

METHOD

*Brine duck breasts 3 days prior to preparing recipe, as follows:

Clean and dress by boning and skinning two Alaska wild ducks.  Place four whole breasts in medium-size, clean, glass bowl in brine consisting of 1 tablespoon table salt and 4 cups cold water, cover and refrigerated for 3 days. Rinse brined duck breasts with cold water until water runs clear; pat dry. Remove any remaining silver skin, cut in half lengthwise, then slice into 1/2" thick pieces.

In a large heavy-bottom stainless steel skillet, over medium-high heat, brown the bacon. Using a slotted spoon, remove bacon to a paper towel-lined plate to drain; set aside. (Retain drippings and bacon grease in skillet).

Add duck pieces to the hot skillet, including granulated garlic and onion, and sauté until browned. Using a slotted spoon, remove duck pieces to another paper towel-lined plate to drain; set aside. (Retain drippings and remaining grease in pan).

Add celery, onion, basil, marjoram, sage, parsley, granulated garlic and onion to skillet and sauté until onions are translucent. Sprinkle in flour and sauté for 1 minute longer.

In the meantime, whisk all sauce ingredients in medium bowl; add to skillet. Also, add the reserved bacon and duck pieces, and bay leaf; bring to boil. Reduce heat to low to gently simmer, covered, for 1 hour, while occasionally stirring. Check sauce consistency when stirring, adding additional water, if needed.

Meanwhile, prepare steamed rice, according to package directions.

SANDRA’S WILD ALASKA PICKLED SOCKEYE SALMON (Jarred)

Although labor intensive, you’ll be reaping rewards many times over
each and every time you open a jar and partake
of your pickled sockeye deliciousness…

Yields: (Appx. 3 Doz., 36, Pint Jars)
Curing: 24 Hrs.
Prep: 6 to 8 Hrs.

Equipment and Supplies:
- 3 cases (36) wide-mouth Mason pint jars, with lids and rims, sterilized – Important!
~~~~[I sterilize the jars using the hot setting in my dishwasher, and boil the lids and rims in water using a medium, covered, pot for 10 minutes]
- 16 qt. cooler (cleaned using hot
water, soap and Clorox)- Important!
2 large stainless steel pots with lids
1 medium stainless steel pot with lid
-Wide-mouth funnel (optional), saves clean-up time
-Kitchen towels
-Plastic wrap
-Paper towels
-Butter knife
-Ladle
-Disposable gloves (or very clean hands you’ll be washing often)
Curing:
10 Wild Alaska Sockeye Salmon
2 (4 lb.)  boxes Canning and Pickling Salt (do not substitute)
1 cup dark brown sugar
Clean and fillet in half 10 sockeye (20 fillet halves).  Lay two fillets lengthwise and side-by-side in bottom of cooler skin-side down, and sprinkle top flesh side of each fillet with several handfuls of pickling salt; repeat process until 2 fillets remain.  Place last 2 fillets skin-side up, then evenly pour remaining pickling salt over all fish. Ensure fish is completely covered with pickling salt (use more pickling salt if needed to do so).  Lastly, add 2 generous handfuls of dark brown sugar sprinkled evenly over top of pickling salt.  Close lid and let cure for 24 hours for 1" thick salmon - add an additional day of curing if thicker per inch of fillets are used, while occasionally moving (using clean hands) to ensure fillets are not sticking to each other. (Note: Do not be alarmed, as the pickling salt/sugar will form its own briny liquid and end up covering and curing all fillets.)
Once curing has taken place for 24 hours, rinse fillets in cold water.
Rinse and clean the cooler, and set aside.
Remove the skin from each fillet, and cut out the strip of bones on the diagonal.  (Note: My husband starts filleting the widest end of the fillet, then while holding the meaty part down with one hand he literally ‘pulls’ the skin off down to the tail section - It’s ingenious, quick, and the flesh of the fish remains intact more so than by filleting it all the way down using a knife!)
Fill the clean cooler half full with very cold water. Cut the fish into 1” chunks, and add to cooler to began the 1-hour rinsing process; changing cold water mid-way through.  Be sure to stir the fish from time to time while doing so.
Glazing (Air drying):
Place long rows of plastic wrap on counter top, with long lengths of paper towel (to prevent salt from ruining the counter surface). Drain fish chunks from water using clean hands, and place fish chunks in a large bowl. Spread evenly in one layer atop paper towels on counter.  Let air dry for 1 hour (you’ll see a soft skin-type glaze form, which enhances flavor and firmness quality of the final product).
Brine (2 batches):
(Note: I prepare pots of brine about 6 hours beforehand to ensure they have sufficient time to cool so they're ready when I began the jarring process)
[Pot 1:]
8 cups water
4 cups white distilled vinegar
1-½ cups white granulated sugar
½ cup dark brown sugar
[Pot 2:]
8 cups water
4 cups white distilled vinegar
1-½ cups white granulated sugar
½ cup dark brown sugar
*(Note: I've found organic pickling spice tends to be much more flavorful than typical store-bought versions, so you might consider increasing the amount per pot of brine to 3/4 or 1 cup)
Add all brine ingredients to both pots; stir to combine. Bring brine in each pot to a boil, cover, reduce heat and let simmer for 30 minutes. Let cool completely with lid on – Important! [Note: To speed up the cooling process; once the brine has cooled somewhat, carefully place entire pot(s) in sink(s) filled with cold water, just so cold water is about a quarter the way up from outside of pot bottom(s).]
Make 2 batches...
Jarring:
- Prepared fish chunks
- Prepared brine
4 large white onions, quartered and sliced into 1/8” strips
-(I keep slices covered with a damp paper towel to alleviate watery eyes)
4 large lemons, quartered, deseeded and sliced into 1/8” thick rectangles
*See Tip below for Jalapeno Pickled Salmon option
Set up an assembly line by placing all jars, mouth side up, on clean kitchen towels, including lids and rims on separate towels close by.  Place prepared onion and lemons in separate bowls close by as well; plus the brine and a ladle, and butter knife.
Begin filling jars by first placing the wide-mouth funnel over the top rim of each. Place a layer of fish chunks on bottom, onions, one slice of lemon; repeat until ½ full. Stir brine to distribute spices, and pour 1 ladle into jar. Continue layering ingredients as before, ending with a layer of onions and a slice of lemon to completely cover fish. Stir brine, then fill jar with ladle to within ¼” of the top of rim. Remove funnel, and run butter knife around inside edge of jar to release air bubbles. Wipe outer rim with a damp paper towel, and tightly secure jar with lid and rim.  Repeat process until all jars are filled.
Label lids using a permanent marker: Pickled Sockeye, date jarred, and 6 months
out as an expiration date. Important! – Place tightly secured jars initially ‘upside down’ to cure for 7 days in refrigerator (to allow the spices to be evenly distributed), and then turn ‘right-side-up’ in refrigerator until expiration date. The pickled sockeye will keep up to 6 months in refrigerator from jarring date. ~ Enjoy!
~~~~~~~~~~~~~~
*Tips:

For “Jalapeno Pickled Salmon,” simply place 3 to 4 store-bought jarred 'hot' pickled jalapeno slices in bottom of jars before filling with remaining above-listed ingredients.

IMPORTANT:  Do not use the water-bath method to seal the jars, as the curing/cooking process is undergone when pickling.  You simply store product in refrigerator up to the expiration date, not in pantry.

MAX’S PAN-SEARED WHITE KING SALMON with REMOULADE SAUCE

My husband Max recently
went fishing in Yakutat, Alaska with
my brother who luckily caught
this delightful white king salmon...
Serving: (2 to 4)
Prep: 5 Mins. |
Pan-Sear: 13 to 15 Mins.

INGREDIENTS

Remoulade Sauce:
1/3 cup ketchup
--(Max only uses Heinz)
1/3 cup mayonnaise
½ teaspoon freshly lemon juice
Pinch of Sitka Seafood Seasoning
--(or Old Bay Seasoning)

Salmon Fillets:
4 (8 oz.) boneless skin-on white (or red) king salmon fillets, 1-1/2” thick
2 tablespoons extra virgin olive oil
1 teaspoon unsalted butter
¼ teaspoon garlic powder
Sea salt and ground pepper, to taste

Sitka Seafood Seasoning
(found  here on Amazon)
--1/2 fresh lemon, cut into 4 wedges for serving

METHOD

Prepare remoulade sauce by whisking all ingredients in a small bowl, and place in refrigerator for flavors to meld.

Meanwhile, heat olive oil and butter in a large nonstick skillet over medium-high heat. Sprinkle salmon fillets equally with garlic powder, sea salt, and ground pepper. Place salmon fillets in hot skillet presentation side down (flesh side), and sear, uncovered, for about 4 to 5 minutes without disturbing, until golden brown. Reduce heat to low, turn fillets over (skin-side down), cover, and cook for 7 to 10 minutes, just until fillets are cooked through and flake easily with a fork.

Serve salmon fillets with fresh lemon wedges and remoulade sauce alongside. ~ Enjoy!

SANDRA’S BAKED HONEY-DIJON CRUSTED WILD ALASKA KING SALMON with RICE CARBONARA

Fresh king salmon makes
this a five-star meal that turned out
fabulously moist and delicious,
and the rice carbonara
makes for a perfect accompaniment...
Servings: (4)
Prep:  5 Mins.
Bake 20 to 25 Minutes.

INGREDIENTS

Crusted Salmon:
1 lb. (2” thick) skin-on king salmon fillets
½ teaspoon kosher salt
¼ teaspoon freshly ground pepper
1 tablespoon grainy dijon mustard
1 tablespoon honey
1 tablespoon mayonnaise
½ tablespoon olive oil

Rice Carbonara:
½ tablespoon olive oil
½ tablespoon butter
¼ cup diced onion
¼ cup diced bell pepper
½ teaspoon granulated garlic
Kosher salt and freshly ground pepper, to taste
2 cups pre-cooked rice
2 tablespoons chopped fresh parsley
1 egg, lightly beaten

Garnish:
--A few sprigs of fresh parsley

METHOD

Preheat the oven to 350 degrees.  Line a baking sheet with foil, and spray with olive oil, and set aside.

Sprinkle fillets equally with kosher salt and freshly ground pepper.  Whisk together dijon, honey, mayonnaise, and olive oil in a small bowl.  Place the fillets on the prepared baking sheet skin side down (the skin will remove easily once the fish is baked).  Brush the sauce mixture all over the top and sides of fillets. Pat breadcrumbs evenly all skinless sides of fish, and spray tops with olive oil.  Place fillets in oven and bake for 20 to 25 minutes, until fish flakes easily with a fork.

Meanwhile, prepare the rice carbonara while the fillets are baking by heating a nonstick skillet to medium heat.  Melt the butter with the olive oil, and add the onion, bell pepper, granulated garlic, kosher salt, and pepper.  Cook until the onions are translucent for about 3 to 5 minutes.  Add the rice and parsley; mixing to combine and cook for 3 minutes.  Add the beaten egg while stirring for 2 to 3 minutes, until cooked and incorporated throughout.

To serve, place the fillets on a serving platter alongside the rice carbonara, and garnish with sprigs of fresh parsley. ~ Enjoy!

~~~~~~~~~~~~~~~~~~
Tip:  Thicker or thinner fillets will take more or less time to bake, although the "rule of thumb" is to bake the fillets about 10 to 12 minutes per inch of thickness.
4 tablespoons red onion, finely chopped
4 tablespoons freshly squeezed lemon juice
1 jalapeno, seeded and ribs removed, and finely chopped
2 teaspoons dried parsley
Sea salt and freshly ground pepper, to taste
Baked wheat thin crackers (or your preferred brand)
METHOD
Add the white wine, bay leaf, old bay seasoning, sea salt, and peppercorns in a non-reactive saucepan and bring to a simmer. Add the salmon cubes and cook for 30 seconds. Remove with a slotted spoon, to drain on a paper towel-lined plate, then place poached salmon in a medium-sized mixing bowl. Mash the salmon cubes with a fork to sufficiently break them up. Add the smoked salmon, sour cream, minced onions, and lemon juice, and mix well. Add the minced jalapeno, parsley, and salt and pepper, to taste.  Chill for 1 hour in refrigerator for flavors to meld.
Return to room temperature, about 30 minutes, before serving. To serve, spread on baked wheat thin crackers. – Enjoy!
Grill: 10 mins.
INGREDIENTS:
1 tablespoon olive oil
1 tablespoon lime juice
1 teaspoon honey
1/2 cup low-fat plain yogurt
1 tablespoon fresh ginger, minced
1 clove garlic, minced
1 green onion, sliced
½ teaspoon dry rosemary
1/4 teaspoon salt
1/2 teaspoon freshly ground pepper
4 (1”) thick salmon steaks (if thicker, allow more cooking time)
1 lime, cut into wedges
METHOD:
Whisk together oil, lime juice, honey, yogurt, ginger, garlic, green onion, rosemary, salt and pepper in a shallow non-reactive dish. Add fish steaks and turn to coat with marinade. Cover and marinate for at least 15 minutes, but no longer than 30 minutes, (turning once after 7 minutes).
Preheat indoor grill to medium-high heat, or an outdoor grill. Oil a folded paper towel, hold it with tongs and rub it over the rack, or grill pan.
Coarsely grind pepper onto steaks. Place the steaks onto hot oiled grill rack, turning once at 5 minutes; continue cooking until the fish is opaque, and flakes easily with a fork, about 10 minutes total (discarding marinade). Serve immediately with lime wedges. - Enjoy all!
INGREDIENTS
***Remoulade Sauce:
1/3 cup ketchup (Max only uses Heinz)
1/3 cup mayonnaise
¼ teaspoon garlic powder
Ground pepper, to taste
½ teaspoon freshly lemon juice
***Salmon Fillets:
4 (8 oz.) boned, skin-on king salmon fillets, 1-1/2” thick (red and/or white)
olive oil
¼ teaspoon garlic powder
sea salt and ground pepper, to taste
--1/2 fresh lemon, cut into 4 wedges for serving
***Max’s Dinner included:
--2 cups of steamed rice, prepared according to package directions
--Ginger/soy sauce (Max’s favorite is the House of Tsang)
--2 ripe roma tomatoes, sliced
--Fresh sprigs of parsley for garnish
METHOD
Make ahead: First, the steamed rice. Also, separately prepare the remoulade sauce by whisking all ingredients in a small decorative bowl, and place in refrigerator for flavors to meld.
Meanwhile, when the steamed rice is about halfway done, heat the olive oil in a large nonstick skillet over medium-high heat. Brush the entire flesh side of salmon fillets with olive oil, and equally season them with garlic powder, sea salt; plus, rather generously with ground pepper. Place the salmon fillets into hot skillet presentation side down (flesh side), and sear, uncovered, for about 4 to 5 minutes without disturbing, until golden brown. Reduce heat to low, turn salmon fillets over so they are skin-side down, cover, and cook for 7 to 10 minutes, just until fillets are cooked through and flake easily with a fork.
To serve, place a salmon fillet on each of the four serving plates, and squeeze a wedge of fresh lemon over each of them. Place a mound of steamed rice on each plate, along with slices of fresh plum tomato, and a sprig of parsley for garnish. Place the ginger/soy sauce on the table for individuals to season their rice, as desired. Don’t forget the remoulade sauce to serve as an accompaniment for the salmon fillets. – Enjoy!
Tip: Cooking times may vary, depending upon thickness of salmon fillets. The ‘general rule of thumb’ is 10 minutes total per 1" thickness of fillet.
INGREDIENTS
2 tablespoons unsalted butter
2 tablespoons light olive oil
¼ onion, minced
4 crimini mushrooms, sliced
2 garlic cloves, minced
2 tablespoons all-purpose flour
2 cups heavy cream
2 cups milk
2 cups prepared, skinless and boneless Alaska smoked salmon strips, broken into chunks
(or kippered salmon fillets)
Sea salt and freshly ground pepper, to taste
½ cup parmesan cheese, grated (divided)
½ lb. prepared fettuccini
--Garnish with 1 tablespoon fresh parsley, chopped; including a few whole sprigs
METHOD
Begin preparing fettuccini according to package directions, which takes about 10 mins.
Meanwhile, melt butter with olive oil in a large non-stick skillet over medium heat. Add onions, and crimini mushrooms, and sauté until onions are translucent. Add the garlic and sauté for 30 seconds. Reduce heat under skillet to medium-low. Add flour slowly while whisking until incorporated; cooking for about 1-2 minutes for flour flavor to cook out. Slowly add cream, and milk while whisking a few minutes, until a thickened sauce forms. Add smoked salmon, and gently stir with a wooden spoon (so salmon pieces do not break up), just to heat through. (Please do not boil or cream might curdle.) Gradually sprinkle 1/3 cup of parmesan cheese over salmon-crimini sauce, and gently stir, just until cheese has melted. Taste for seasonings, adding sea salt and ground pepper, to taste (be careful, as the both the salmon and cheese tend to have a faily high salt content). Remove skillet from heat.
Drain fettuccini (while reserving a ladle full of pasta water), toss drained pasta lightly with a drizzle of olive oil, and pour hot pasta onto a large platter. Check consistency of sauce, adding pasta water to thin, if needed (test the consistency by dipping the backside of the wooden spoon into sauce, and running your finger through it and it should hold its shape, you do not want it too thick).  Spoon salmon-crimini sauce over top of pasta and lightly toss, and sprinkle with remaining parmesan cheese. Garnish with chopped parsley, and a few whole parsley sprigs placed in the center of entree. – Enjoy!
Tip: I like to serve this with glasses of quality white wine, and individual garden salads drizzled with vinaigrette.
