SANDRA’S QUICK ASIAN VEGETABLE STIR-FRY WITH NOODLES

There are times when I have a craving for Asian food,
and this quick entree fits the bill perfectly...
Servings: 4 to 6
Prep: 10 Mins.
Cook: 10 Mins.

INGREDIENTS

Noodles:
8 oz’s (half a box) thin spaghetti noodles, cooked according to package directions

Pre-steam broccoli:
2 cups fresh broccoli florets, cut smaller
--(Pre-steam on high for 3 minutes in a covered microwave-able bowl with 2 TBs water)

Vegetables:
2 tablespoons Mazola oil
2 cups pre-steamed (above) broccoli florets, drain water beforehand
1 small yellow onion, julienned
1/2 red bell pepper, julienned
1/2 orange bell pepper, julienned
1/2 teaspoon garlic powder
1/4 teaspoon red pepper flakes
--2 green onions, white and green parts sliced on the diagonal (added last)

Sauce:
1/3 cup low-sodium soy sauce
1 tablespoon dark brown sugar
1 teaspoon ground ginger
1 tablespoon rice vinegar (unseasoned)
1/4 teaspoon sesame oil
3/4 cup low-sodium beef broth

Garnish:
1 TB roughly chopped fresh cilantro

METHOD

Prep all stir-fry ingredients, including pre-steaming broccoli in microwave, and mixing the sauce in a small bowl, prior to making stir-fry; set all aside.

Begin cooking noodles, according to package directions.

Heat a large stainless steel skillet over medium-high heat; add oil. When hot, stir-fry pre-steamed broccoli, onion, bell peppers, garlic powder, and red pepper flakes for 7-9 minutes until broccoli is crisp-tender. Stir in sliced green onions.

Whisk the sauce, then add to the skillet. Cook, while stir-frying for 2 minutes.  Add hot noodles to the skillet, toss, using tongs, to combine.

Transfer stir-fry to a serving platter, garnish with fresh cilantro and serve family style. ~ Enjoy!


SANDRA'S ALASKA HEARTY FALL VEGETABLE LASAGNA (Downsized)

You'll never miss the meat with this hearty veggie lasagna,
it's full-flavored and scrumptious,
especially when served with sides of
warm and crispy garlic bread
and a garden salad tossed with a freshly made vinaigrette...


Servings: (4-6)
Prep: 20 Mins.
Bale: 1 hour

INGREDIENTS

White Sauce
1-1/2 cup 2% low-fat small curd cottage cheese
2 tablespoons shredded Parmesan, plus more for topping
1 large egg, beaten
1 garlic clove, minced
1/2 teaspoon dry onion granules
2 tablespoons freshly julienned basil (from my garden)
1 teaspoon dry Italian herb blend
1 teaspoon kosher salt
1/2 teaspoon seasoning salt
1/2 teaspoon freshly ground black pepper

Pasta
10 Curly Edged dry pasta noodles, broke in half and cooked according to pkg directions (only for 12 minutes)
--drain, then pull apart using tongs to cool slightly

Sautéed Vegetable mixture
2 tablespoons Olive Oil
4 mini bell peppers: 2 orange, 2 red, diced (from my garden)
1/4 yellow onion, diced
2 medium zucchini, cut in half lengthwise, then sliced into 1/4" half moons
1/2 teaspoon garlic granules
Pinch of kosher salt
1/4 teaspoon pepper

Shredded Cheese Mixture
2 cups shredded low-fat mozzarella cheese
1 cup shredded Italian blend cheese

Marinara
4 cups marinara sauce (either your favorite store bought, or my homemade recipe; CLICK LINK)

METHOD

Preheat oven to 350F. Set aside an 8x8" square glass baking dish, including a baking sheet to set it on top of while baking (to prevent potential spillage).

In a medium bowl, combine all of the white sauce ingredients; set aside.

Prepare the pasta, as directed above.

In a large non-stick skillet, add the olive oil and heat to medium-high heat. Add all the ingredients and sauté for 7 to 9 minutes, just until the onions are translucent but not browned. Remove from heat to slightly cool.

To arrange the lasagna, add enough marinara to cover bottom of baking dish.  Lay a layer of lasagna noodles, overlapping slightly to cover marinara.  Add enough marinara to cover noodle layer.  Add 1/3 of the sauce mixture, 1/3 of the cheeses, and 1/3 of the vegetable mixture. Repeat laying from the noodles in the opposite direction 1 more time.

To finish, topping off, add the final layer of the vegetable mixture, the remaining cheeses, then top by drizzling 4 strips of marinara across the top (as in photo), then sprinkle the marinara strips with parmesan.

Bake for 40 minutes covered, topped with parchment then foil, for 40 minutes. Uncover (save the parchment and foil to store in frig later if you have leftovers), then continue baking for 20 minutes until top cheesy portions turn golden brown and delicious. Let stand, uncovered, for 15-20 minutes to set prior portioning out and serving.~ Enjoy!

SANDRA'S TERRIFIC TUNA NOODLE CASSEROLE


A quick and easy go-to meal made with ingredients
most have on hand, and it's deliciously addicting...
 

Servings: (6-8)
Prep: 20 Mins.
Bake: 35 Mins.

INGREDIENTS

Pasta:
1 (12-oz. bag) wide-egg noodles cooked according to pkg directions, but to al dente for about 5 minutes, drain

Filling:
2 TB mazola oil
1/2 cup diced yellow onion
1/4 cup diced celery
1/4 cup finely diced carrots
Assembled and ready for the oven...
1 (4-oz can) sliced mushrooms, drained
1/2 teaspoon garlic granules
1/2 teaspoon onion granules
1/4 teaspoon red pepper flakes
1/2 teaspoon Johnny's Seasoning
1/4 teaspoon Old Bay Seasoning
--1/4 cup frozen peas

Sauce:
1 (10.5-oz can) cream of mushroom soup
1 (7-oz can) albacore tuna packed in water, do not drain - however break up pieces
3/4 cup mayonnaise
1 cup 2% milk
3/4 cup shredded Mexican blend cheese
1 TB worcestershire
1 teaspoon lemon juice
1 TB dried parsley

Topping:
13 ritz crackers, crushed
1 TB shredded parmesan
2 tablespoons melted unsalted butter

METHOD

Preheat oven to 375 degrees. Spray, then set aside a 9x13" glass baking dish.

Heat oil in a large skillet over medium heat, add all filling ingredients, except frozen peas, and cook for 5 to 7 minutes while occasionally stirring, just until carrots are crisp-tender. Add the frozen peas, and set skillet aside off heat.

In a large bowl, combine sauce ingredients.  Add the cooked noodles and filling ingredients to the bowl; fold to combine.  Add casserole mixture to the baking dish and spread out in an even layer.

In a small bowl, add the crushed ritz crackers, parm cheese and melted butter, mix to combine.  Sprinkle casserole with the topping mixture.

Bake in preheated oven, covered, for 25 minutes. Uncover, then continue baking for 10 minutes, just until top turns golden.  Let stand 5 minutes, then serve with your favorite salad and/or garlic bread. ~ Enjoy!


SANDRA'S ALASKAN HEARTY MOOSE LASAGNA

I created this lasagna recipe
using ingredients I had on hand this morning.

It turned out fabulous just in time for lunch!
We'll be enjoying this for dinner as well...

Bake: 1 Hr.
Let Stand: 15 Mins.

INGREDIENTS:

Moose meat sauce: 
--(When using no-boil lasagna noodles, it's imperative that the sauce be thinner than normal so the correct lasagna consistency is achieved):
1 lb. extra-lean moose burger 
--(or other types of meat, although drain after browning if non-extra-lean burger is not used)
1/4 cup finely chopped sweet onion
1/4 cup finely chopped red bell pepper
1/4 cup finely chopped button mushrooms
1/2 teaspoon sea salt
1/4 teaspoon freshly ground pepper
1/2 teaspoon granulated garlic
1/2 teaspoon granulated onion
2 teaspoons balsamic
1 teaspoon worcestershire
2 teaspoons amber agave
1 (24 oz jar) Newman's Own Organic Tomato Basil marinara sauce
1/4 cup water (to rinse marinara jar, as this sauce is rather thick)
1 (15. oz. can) Italian diced tomatoes, undrained

Cheeses:
4 cups shredded fiesta blend cheese, divided
1 (15 oz. container) ricotta
1/4 cup finely shredded fresh parmesan, plus more for final topping

Pasta:
12 no-boil lasagna pasta sheets

METHOD:

Preheat oven to 375 degrees. Set aside a 9x12" glass baking dish sprayed with oil, and place atop a slightly larger foil-lined baking sheet.

Moose meat sauce:
In a medium saucepan over medium high-heat, brown the burger half way about 3 minutes. Add the onion, bell pepper and onions and cook for 3 minutes. Add the remaining sauce ingredients and bring to boil; reduce heat to simmer, cover, and let simmer for about 10 minutes. Remove from heat, uncover, and set aside.

Cheeses:
Meanwhile, in a medium bowl, gently combine 2 cups of fiesta blend cheese, ricotta and parmesan. Set aside, along with remaining 2 cups of fiesta blend cheese.

Pasta:
Lay out no-boil lasagna sheets; set aside.

ASSEMBLY:

Lightly cover bottom of prepared glass baking dish with a bit of sauce.

Then begin layering with 3 sheets of no-boil pasta, 3/4 cup of sauce, 3/4 cup of cheese mixture; repeat 3 times.

Final layer: Place 3 sheets of no-boil pasta, the remaining sauce, and top with reserved 2 cups of fiesta cheese, including a final sprinkling of parmesan.

Assembled lasagna, ready for the oven...
BAKE:

Cover baking dish with foil (sprayed underneath with oil to prevent cheese from sticking while baking). Bake for 45 minutes.  Remove foil and continue baking for 15 minutes, until lasagna is bubbly and golden on top. 

Remove lasagna from oven and let stand on wire rack, uncovered, for 15 minutes prior to slicing. Serve lasagna with your favorite dressed garden salad. ~ Enjoy!


SANDRA'S COMFORTING PENNE with VEGGIES



Had a craving for a meatless dinner this evening 
so created this recipe using on-hand ingredients, 
which 'fit the bill' to perfection...

Servings: (6)
Prep: 10 Mins.
Cook: 25 Mins.

INGREDIENTS

1/2 lb. penne pasta, prepared according to pkg. directions
2 tbsp. light olive oil
2 tbsp. unsalted butter
1/2 onion, finely chopped
1/2 yellow bell pepper, finely chopped
6 crimini mushrooms, halved and sliced
1 garlic clove, minced
2 zucchini, cubed
1 (15 oz. can) diced Italian seasoned tomatoes, undrained
1 teaspoon kosher salt
1/4 teaspoon red pepper flakes
2 teaspoons dried basil
2 teaspoons worcestershire
2 teaspoon balsamic
Small squirt of agave (or honey)
1/4 teaspoon freshly ground pepper

Finishing:
2 tablespoons. unsalted butter
Freshly grated parmesan cheese

METHOD

Begin preparing pasta according to package directions, except cooking shy by a couple minutes (pasta will finish cooking in sauce).  When draining, reserve 1/2 cup hot pasta liquid; set aside.

Heat olive oil and 2 tablespoons of butter over medium heat in a large skillet. Add onion, bell pepper, mushrooms and garlic. Cook until onions are translucent, about 5-7 minutes. Add zucchini and tomatoes, kosher salt, red pepper flakes, basil, worcestershire, balsamic, and agave. Reduce heat to low, cover, and cook 10 minutes.

Add cooked, drained, hot pasta with and additional 2 tablespoons softened butter to skillet, along with freshly ground pepper, and reserved pasta water; toss to combine, and cook for a final 2 minutes.

Serve in pasta bowls, topped with freshly grated parmesan. ~ Enjoy!

SANDRA'S MAGNIFICENT 4-CHEESE LASAGNA (Serves 6)

A smaller lasagna recipe version I created for families 
consisting of fewer members. I also made a double batch;
one for this evening, and another for the freezer...


Prep: 30 Mins.
Bake: 45 Mins.
Servings: (6)

INGREDIENTS

Feel free to double the recipe to make it crowd-size, 
or a second batch for the freezer as I did!

Sauce:
1 lb. extra-lean moose burger
--(Or, venison, beef, elk, caribou, buffalo, etc., 
including the option to add Italian sausage, if preferred)
1 small yellow onion, chopped
1 small orange bell pepper, chopped (or your desired color)
1 garlic clove, minced
Pinch of red pepper flakes
1 (24 oz. jar) prepared marinara sauce
1 cup water
--(You need the addition of water so your sauce is a bit looser 
when using no-bake lasagna noodles, 
as they absorb quite a bit liquid while baking)
1 teaspoon Italian herb seasoning
1 teaspoon granulated sugar
1 teaspoon balsamic vinegar
1/2 teaspoon sea salt
1/4 teaspoon freshly ground pepper

Cheese Mixture:
1 large egg
1 cup ricotta cheese
1/4 cup grated parmesan cheese; plus more for topping
2 cups shredded mozzarella cheese
1 cup shredded medium cheddar cheese
1/2 teaspoon Italian herb seasoning
1/4 teaspoon freshly ground pepper

6 no-boil lasagna noodles

Topping:
1/4 cup shredded parmesan cheese

Side dish options:
--Warm and Crusty Garlic and Parmesan Bread
--Garden and Cheese Salad topped with a Light Vinaigrette

METHOD

Preheat oven to 375 degrees. Spray a 9"x9" square baking dish and set aside.

In large skillet, brown the burger over medium-high heat until about 3/4 the way done.  Add the onion, bell pepper, and garlic. Stir mixture, and continue cooking for 5 minutes.  Add the remaining sauce ingredients, mix to incorporate, cover, and bring to a boil.  Reduce heat and simmer for 20 minutes.


Meanwhile, in a medium bowl, whisk the egg with ricotta cheese.  Add remaining cheese mixture ingredients, and fold with a spoon to incorporate.


Make an assembly line consisting of the skillet of sauce, bowl of cheese mixture, no-boil lasagna noodles, and prepared baking dish.  Spoon a bit of sauce bottom of baking dish.


Layer two no-boil noodles on top in a horizontal direction.


Place a layer of cheese mixture on top of noodles.


Repeat laying of ingredients in this manner 2 additional times. [Note: Ensure that the second layer of noodles are placed in a vertical direction, and the 3rd back to a horizontal direction, which provides for more uniform cutting when serving lasagna.] End with a generous layer of sauce and cheese mixture.Top with 1/4 cup of shredded parmesan cheese.

Lasagna ready to be covered and placed in oven...
Spray underside of tin foil (to prevent it from possibly sticking to cheese) and cover baking dish. Bake lasagna for 30 minutes. Uncover, and continue baking for an additional 15 minutes, until cheese is golden and lasagna is bubbly. Let lasagna stand to set for a minimum of 15 minutes prior to cutting. ~ Enjoy!

SANDRA'S MINI-PENNE CHICKEN 'N VEGGIE SOUP with MEXICAN-STYLE CORNBREAD


A quick 30-minute pasta 'n veggie soup
when using precooked, leftover poultry,
i.e., chicken or turkey
(or store-bought rotisserie chicken),
including changing it up with
whatever veggies
you may have on hand...
Servings: (4)
Prep:  5 Mins.
Cook: 30 Mins.

INGREDIENTS

2 cups cooked boneless skinless chicken breasts, cubed
7 cups low-sodium chicken broth
1 small yellow onion, chopped
1 red bell pepper, chopped
2 ribs of celery, chopped
1 garlic clove, minced
1 teaspoon Poultry Seasoning Blend
1 whole bay leaf
Freshly ground pepper, to taste
8 ozs. (1/2 box) Barilla White-Fiber Mini-Penne pasta, cooked accordingly
1 Generous handful fresh parsley, roughly chopped


In a medium heavy-bottom saucepan, heat 1 tablespoon vegetable oil to medium high heat.  Add onions, bell pepper, and celery, then saute until onions are translucent.  Add garlic, poultry seasoning and bay leaf, then saute for 30 seconds.  Add chicken broth, and bring to boil; cover, and reduce heat to low and gently simmer for 15 minutes.  Add chicken cubes and continue simmering, covered, for an additional 10 minutes.

Meanwhile, in another medium saucepan, cook the mini-penne according to package directions, then drain.

Toss bay leaf once chicken/vegetable soup has finished cooking.  Add parsley; stirring to combine.

To serve, place pasta in equal amounts into 4 soup bowls, ladle chicken and vegetable broth on top, with slices of warm cornbread alongside. ~ Enjoy!

Tip:  If you have leftovers, store pasta separate in a ziploc bag (from the chicken/vegetable broth) otherwise the pasta tends to lose its integrity if you refrigerate them together.

SANDRA’S SEAFOOD-OLYMPIA STUFFED JUMBO PASTA SHELLS

A delicate, creamy and exquisite
scallop-shrimp-halibut olympia pasta entree that
is bound to leave you speechless...
This recipe was inspired by my sister in law Chantil’s Halibut Olympia recipe that our family adores.

Servings: (4) Individual Gratins
Prep: 10 Mins
Bake 25 Mins.

INGREDIENTS:

20 Jumbo Pasta Shells
¼ teaspoon sea salt

Sauce:
2 cups sour cream
2 cups mayonnaise
2 cup freshly grated Parmesan cheese
1 teaspoon old bay seasoning

Filling:
½ lb. fresh bay scallops, cut into ½” chunks
½ lb. fresh shrimp, peeled and deveined, then cut in half lengthwise
½ lb. skinless, boneless fresh halibut, cut into ½” chunks
¼ yellow bell pepper, finely chopped
½ teaspoon garlic granules
½ teaspoon onion granules
¼ teaspoon white pepper
1 tablespoon Italian parsley, finely chopped
1 cup canned, French fried onions

Garnish:
½ teaspoon paprika
1 green onion (green parts only), finely sliced

METHOD:

Add water into a 6 qt. pot and bring to boil, add salt and pasta and cook for 10 minutes, just until al dente so the shells are easier to fill (as they will continue to cook in the oven).  Drain shells in a colander, then place them upside down on a foil-lined baking sheet to further drain any additional water.


Preheat oven to 350 degrees. Spray 4 individual gratin dishes, and set aside.

In a medium bowl, combine sauce ingredients.  


Spread a 2 heaping teaspoons of sauce in each gratin dish, and spread evenly over bottom of dishes. 



Add filling ingredients to a medium bowl, including folding in 1/3 of the remaining sauce until combined. Set remaining sauce aside.


Fill each of the pre-cooked pasta shells with about 1 heaping tablespoon of the seafood mixture, and place shells filling side up in gratin dishes on top of sauce; adding 5 shells per gratin dish. 


Generously top filled shells equally in gratin dishes with remaining sauce. Bake for 25 minutes, until golden brown. 


Garnish with paprika and sliced green onions; serve immediately. Enjoy!

MAX’S IRRESISTIBLE HAM and VEGGIE PASTA SALAD

A wonderful pasta salad for potlucks,
‘game day’, get-togethers,
or just because...
Servings: (8-10)
Prep: 10 Mins.
Cook: 15 Mins.

INGREDIENTS

½ lb. elbow pasta, cooked and cooled
--(Max prefers Barilla due to ridges in the macaroni)
2 cups cooked and cubed ham
5 eggs, hard-boiled, peeled and chopped
2 celery ribs, chopped
6 radishes, thinly sliced
3 green onions, finely sliced
2 tablespoons chopped dill pickles 
--(Max prefers Nalley Baby Dills)
1 small can sliced black olives, drained
1 cup mayonnaise
--(more or less to your desired moistness)
1-1/2 tablespoons dijon mustard
2 tablespoons red wine vinegar
½ teaspoon old bay seasoning
½ teaspoon garlic granules
½ teaspoon onion granules
½ teaspoon paprika
2 tablespoons fresh parsley, chopped
½ teaspoon freshly ground pepper

METHOD

Cook pasta according to package directions.  Drain in colander while running cold water over noodles to quickly cool.  Pour drained pasta in a large bowl, and add the remaining ingredients.  Gently fold to combine. Let stand, covered, for a minimum of 1 hour in refrigerator for flavors to meld, then serve. ~ Enjoy!

SANDRA’S CLASSIC STROGANOFF over WIDE EGG NOODLES

A classic go-to recipe I have
prepared for my family
for many, many years that’s
very quick, easy, and tasty...
Servings: (4)
Prep: 5 Mins.
Cook: 20 Mins.

INGREDIENTS

1 lb. lean venison burger (or beef)
2 large shallots, minced
1 large garlic clove, minced
1 cup sliced fresh button mushrooms
2 teaspoons all-purpose flour
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
1 (10.75 oz.) can cream of mushroom soup
1 can of milk (use soup can)
1 teaspoon dry mustard
2 teaspoons worcestershire
2 tablespoons quality white wine
3/4 cup sour cream
1 tablespoon finely chopped fresh parsley

Garnish:
1 – Green onion (green part only), finely sliced

--1 (12 oz. pkg.) wide egg noodles prepared according to package directions

METHOD

Brown ground beef over medium-high heat with shallots until beef is no longer pink and shallots are translucent.


Add garlic and mushrooms; sauté for 2 minutes. Add flour, salt, and pepper, and toss to combine; cooking for 1 minute.  


Add soup and remaining ingredients, except sour cream and parsley. Simmer uncovered 15 minutes; stirring occasionally. 


Remove skillet from heat, and stir in sour cream and parsley. 


Stir to combine.



Serve over prepared wide egg noodles, and garnish with sliced green onions. ~ Enjoy!

SANDRA’S GRILLED SHRIMP and VEGGIES with LINGUINI

A light, easy, and quick shrimp pasta
dinner that's sure to please...
Servings: (4)
Prep: 10 Mins.
Cook: 15 Mins.

INGREDIENTS

Grill:
1 lb. shrimp, peeled and deveined (I used large Skagway Coon Prawns)
½ red onion, julienned to ½”
½ red bell pepper, julienned to ½”
2 tablespoons extra-virgin olive oil
½ teaspoon garlic granules
½ teaspoon Italian herbs blend
1/4 teaspoon crushed red pepper flakes
½ teaspoon freshly ground sea salt
½ teaspoon freshly ground black pepper

Pasta:
1 (16 oz. pkg.) linguini
2 tablespoons unsalted butter
3/4 cup Parmesan cheese
1 cup reserved hot pasta water

Garnish:
2 tablespoons Parmesan cheese
2 tablespoon fresh basil, chopped

METHOD

Place the shrimp, bell pepper, onions, olive oil, and remaining herbs and seasonings into a medium bowl; toss to combine.  Let the mixture marinade for 10 minutes.


Meanwhile, prepare pasta according to package directions, about 10 minutes cooking time.

While the pasta is cooking, preheat an indoor (or outdoor) grill to medium-high heat.  Using tongs, place the shrimp, bell pepper, and onions onto hot grill.  


Grill the shrimp only 2 minutes per side, and then remove to a plate (they should have a loose curl as shown in photograph, not a tight curl as that indicates they are overcooked).  


Continue grilling vegetables until crisp-tender, about 5 to 7 minutes.


Drain the linguini, reserving 1 cup of hot pasta water.  Add butter to the hot pot to melt, and add the drained linguini, basil, Parmesan cheese; toss to combine. Add the reserved hot pasta water, and toss to form the sauce. 


Place the linguini among four serving plates.  Add the grilled vegetables over top, and garnish with Parmesan and basil. ~ Enjoy!

SANDRA’S TRI-COLOR ROTINI with a BROCCOLI PESTO SAUCE

A meal you can prepare within
15 minutes, and still have pesto
sauce leftover to further enjoy (see *Tip below)...

INGREDIENTS

Pasta:
12 oz. Tri-Color Rotini (I prefer Barilla brand)

Pesto Sauce:
4 cups organic broccoli florets
½ cup crumbled walnuts
2 organic garlic cloves
½ cup grated Parmesan and Pecorino Romano cheese
1 teaspoon fine-grained sea salt
½ teaspoon freshly ground pepper
½ cup fresh organic lemon juice
1/3 cup organic olive oil
1/3 cup organic canola oil

Garnish:
--1 roma tomato, chopped
--4 sprigs of parsley

METHOD

Prepare pasta according to package directions.  Drain, while reserving ½ cup pasta water.

Sandra's Broccoli Pesto Sauce
Meanwhile, in a food processor, pulse broccoli, walnuts, cloves, cheese, sea salt, and pepper until finely minced.  Mix the oils and lemon juice in a 2-cup glass-measuring cup, and slowly drizzle through spout of food processor while pulsing until smooth.

Return hot, drained pasta back to pot, and toss with desired amount of pesto (I used 1 cup), adding ½ cup of hot pasta water to provide for a creamier sauce.  Garnish with freshly chopped roma tomatoes and sprigs of parsley, and serve. ~ Enjoy!

*Tip:  A great pesto sauce to serve as a spread on bagels or crusty slices of bread, over omelets, or for spreading on hot fillets of salmon or halibut, or as a base sauce for pizzas, and so on.

INGREDIENTS

1 (1.5 lb.) spaghetti squash
1 tablespoon olive oil
1/4 red onion, julienned
1 garlic clove, minced
1/4 teaspoon red pepper flakes
2 ripe roma tomatoes, chopped
1/4 cup jarred marinated and quartered artichoke hearts, roughly chopped
6 kalamata olives, quartered lengthwise
2 tablespoons jarred roasted red bell peppers, roughly chopped
3 tablespoons prepared basil pesto
½ teaspoon lemon juice
2 tablespoons feta cheese crumbles

METHOD

Pulp resembles spaghetti
Pierce squash with a paring knife (leave whole). Place on paper towel lined plate in microwave, and cook on high for 10 minutes, until squash is soft. Let stand 10 minutes to cool.




Amount  that a 2.5#
 squash yields
Meanwhile, heat olive oil in a large skillet over medium-high heat. Add onion and saute until tender. Add garlic, red pepper flakes, and saute for 30 seconds. Add the tomatoes, artichokes, kalamata olives, and roasted bell peppers; cook only until tomatoes are warm.  Cut the squash in half lengthwise, and use a large spoon to scoop out the pulp.  Add the pulp, basil pesto, lemon juice to skillet, and toss with tongs to incorporate with vegetables and to warm through.  Pour into serving dish, top with feta cheese crumbles, and serve warm. – Enjoy!

INGREDIENTS

2 tablespoons unsalted butter
2 tablespoons light olive oil
¼ onion, minced
4 crimini mushrooms, sliced
2 garlic cloves, minced
2 tablespoons all-purpose flour
2 cups heavy cream
2 cups milk
2 cups prepared, skinless and boneless Alaska smoked salmon strips, broken into chunks
(or kippered salmon fillets)
Sea salt and freshly ground pepper, to taste
½ cup parmesan cheese, grated (divided)
½ lb. prepared fettuccini

--Garnish with 1 tablespoon fresh parsley, chopped; including a few whole sprigs

METHOD

Begin preparing fettuccini according to package directions, which takes about 10 mins.

Meanwhile, melt butter with olive oil in a large non-stick skillet over medium heat. Add onions, and crimini mushrooms, and sauté until onions are translucent. Add the garlic and sauté for 30 seconds. Reduce heat under skillet to medium-low. Add flour slowly while whisking until incorporated; cooking for about 1-2 minutes for flour flavor to cook out. Slowly add cream, and milk while whisking a few minutes, until a thickened sauce forms. Add smoked salmon, and gently stir with a wooden spoon (so salmon pieces do not break up), just to heat through. (Please do not boil or cream might curdle.) Gradually sprinkle 1/3 cup of parmesan cheese over salmon-crimini sauce, and gently stir, just until cheese has melted. Taste for seasonings, adding sea salt and ground pepper, to taste (be careful, as the both the salmon and cheese tend to have a faily high salt content). Remove skillet from heat.

Drain fettuccini (while reserving a ladle full of pasta water), toss drained pasta lightly with a drizzle of olive oil, and pour hot pasta onto a large platter. Check consistency of sauce, adding pasta water to thin, if needed (test the consistency by dipping the backside of the wooden spoon into sauce, and running your finger through it and it should hold its shape, you do not want it too thick).  Spoon salmon-crimini sauce over top of pasta and lightly toss, and sprinkle with remaining parmesan cheese. Garnish with chopped parsley, and a few whole parsley sprigs placed in the center of entree. – Enjoy!

INGREDIENTS

2 tablespoons olive oil
½ medium yellow/Spanish onion, chopped
1/4 teaspoon red pepper flakes
2 large garlic cloves, minced
1 medium zucchini, sliced in half lengthwise, and then into 1/8” thick slices
1/2 teaspoon kosher salt
1 (4.75 oz. can) chopped clams, undrained (preferably Snow’s)
--or preferably ½ cup freshly cooked with 1/4 cup of reserved liquid
2 tablespoons parsley, chopped
8 ozs. (1/2 box) angel hair pasta
1 tablespoon unsalted butter
1 roma tomato, chopped

METHOD

Begin by boiling the angel hair pasta in salted water for 6 to 8 minutes, while stirring often to prevent sticking together, only until al dente.

Meanwhile, place a large skillet over medium-heat, and add the olive oil. Add the onions and red pepper flakes and saute until the onions are translucent, then add the zucchini, garlic, and cook for 3 minutes. Add parsley, gently stir in the clams with the juice, and add the butter; mixing to combine. Reduce heat to low to simmer, just until pasta is done.

When angel hair is done, reserve 1/4 cup (about a ladle full) of the pasta water before draining the angel hair, and add the reserved pasta water including the drained angel hair into the zucchini mixture in the skillet, and gently toss with tongs to combine.

Pour onto a serving platter, top with freshly chopped tomatoes, and serve immediately. – Enjoy!

Tip: I like to break my pasta up when placing it in the pot of boiling water, as it makes for easier tossing, and more even cooking, including serving.


MAX'S HEARTY SPAGHETTI DINNER with CAESAR SALAD - [Updated as of 10-6-10]

INGREDIENTS

1 lb. spaghetti noodles
Garlic bread
--(Max purchases his from Fred Meyer Bakery)


***Sauce:
1 lb. beef/moose/venison burger
1/2 lb. moose breakfast sausage (Jerry’s Meats processes his)
2 cloves garlic, minced
1 cup celery, finely chopped
½ red bell pepper finely chopped
1/3 red onion, finely chopped
1 teaspoon sweet basil
½ teaspoon cayenne pepper
¼ cup Heinz ketchup
2 (15 oz. cans) tomato sauce
1 (15 oz. can) italian stewed tomatoes, mashed in a small bowl (do not drain)
2 teaspoons italian seasoning
2 bay leafs
1 handful of parsley, roughly chopped

***Garnish:
Freshly grated parmesan cheese

*** Caesar Salad:
- Romaine lettuce, torn
- Marie’s caesar salad dressing (his fav.)
- Freshly grated parmesan cheese
- Bacon bits
- Seasoned croutons
- Freshly ground black pepper, to taste

METHOD

Place a large skillet over medium-high heat; add the burger and sausage cooking until lightly browned; toss in all the vegetables and seasonings (except the fresh parsley). Add the ketchup, tomato sauce, and broken up italian stewed tomatoes with juices, stirring to combine. Cover skillet, and reduce heat to simmer, cooking sauce low and slow for 2 hours, while stirring occasionally.

Meanwhile, about 20 minutes before sauce is done, begin cooking spaghetti according to directions, and toss garlic bread into oven shortly thereafter and also cooking it according to directions.

For the salad, tear the romaine lettuce into a large bowl, add your desired amount of ‘Marie’s’ caesar salad dressing, and freshly grated parmesan; tossing to combine.  Add bacon bits, seasoned croutons, and freshly ground pepper; tossing just before serving.

Add freshly chopped parsley to the spaghetti sauce, and stir to combine.

Max serves his spaghetti sauce over noodles family style, with a small bowl of freshly grated parmesan cheese to sprinkle on top, if  desired.  He places slices of garlic bread, including a mound of caesar salad along side, + a nice glass of red wine. - Enjoy!
