SANDRA'S INDIVIDUAL PEACH COBBLERS IN JARS

Another of my recipes I've modified for serving at a single setting,

All my recipes (as each are kitchen-tested) take many modifications until perfected.

These individual desserts are cute, decadent and comforting
to serve during those cold winter months...

SANDRA'S ALASKAN-BLUEBERRY and PEACH COBBLER

A wonderful method in which to prepare your Alaskan summer-harvested blueberries
that have been frozen, and its combination with peaches to form this decadent
cobbles is nothing short of amazing...

Servings: (12)
Prep: 25 mins.
Bake: A total of 30 mins.
--(At two temperatures: 350 degrees for 15 mins, then 450 degrees for the final 15 mins)

INGREDIENTS:

Fruit and berries:
1 (24-oz. jar) Costco peaches, drained
1/4 cup granulated sugar
1/2 teaspoon ground cinnamon
3 tablespoons unsalted butter

--2 cups frozen blueberries (keep frozen until ready to use, do not add to above heated mixture)

Cobbler dough:
1 cup all-purpose flour
1/4 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/2 teaspoon kosher salt
1/2 cube cold, unsalted butter, cut in 12 small cubes
3/4 cups cold milk, mixed with 2 teaspoons lemon juice (let set 5 minutes to activate)

--Topping:
--1 tablespoon granulated sugar
--1/2 teaspoon cinnamon

METHOD:

In a medium skillet melt 3 tablespoons butter, add sugar, cinnamon, and peaches.  Mix to combine, while bringing to a low simmer. Let filling gently simmer, while occasionally stirring, for 15 minutes.

Preheat oven to 350 degrees (Note: Will increase oven temp mid way through baking to 450 degrees).

Meanwhile, prepare cobbler dough, by adding to a medium bowl the flour, sugar, baking powder and soda, cinnamon, ginger, and salt. Whisk dry ingredients so they are evenly combined.  Using a pastry cutter to work in the cold, cubed butter, until course mixture resembles the size of peas. In a 2-cup glass-measuring cup, add 1-1/4 cup milk and 1 tablespoon lemon juice, then let stand for 5 minutes to activate.  Pour this liquid mixture into dry ingredients, and use a fork to combine (do not over mix).

Pour hot peach mixture in a single layer into a 9x13" baking dish (or other 3-qt. size), sprinkle 2 cups of frozen blueberries evenly over the top of the hot peaches. Use 2 forks to dollop the cobbler dough over the fruit and berries, while leaving spaces for filling to steam through.

Combine topping of cinnamon and sugar in a small bowl, then sprinkle evenly over top of dough.

Place baking dish atop a foil-lined baking sheet (to catch potential spill over), then bake at 350 degrees for 15 minutes, increase heat to 450 and continue baking for 15 minutes, or until a toothpick inserted in center of cobbler dough comes out clean.

When cobbler has finished baking, let cool for 15 minutes prior to serving. If desired, serve warm with French vanilla ice cream or whipped cream. ~ Enjoy!

SANDRA'S HOMEMADE GRANOLA CLUSTERS

My favorite homemade
granola ingredient combo to date
~ this is a keeper!

Yields: (Appx. 4-1/4 cups)
Prep: 15 Mins.
Bake: 30 Mins.

INGREDIENTS

1st -- Pulse in food processor until half its size:
1-1/2 cups old-fashioned oats (not quick cooking)

2nd -- Pulse in food processor until the size of the 'pulsed oats'
1/4 cup whole candied pecans
1/4 cup whole walnuts
1/2 cup shelled sunflower seeds
1/4 cup sliced almonds
1/4 cup dried cranberries
1/4 cup shredded, sweet coconut

3rd -- Final addition:
1/4 cup maple syrup
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
2-*3 tablespoons coconut oil, melted (takes about 40 seconds in the microwave on High)
Fine-grain kosher salt, to taste

Granola serving options, add:
--Milk for cereal
--Yogurt and fresh fruit for a layered parfait
--Snack-size Ziploc bag for snacking on the go (feel free to add chocolate chips, M&M's, etc.)

METHOD

Preheat the oven to 300 degrees. Line a 14x17" rimmed baking pan (makes for easier stirring, as you'll read below) with parchment paper; set aside.

Add 1st Pulse the old-fashioned oats to the food processor and process until 1/2 its size, or to your desired texture. Pour into a large bowl. (No need to clean out processor at this point.) -- Add the 2nd Pulse ingredients to the food processor and process until the size of the 'pulsed' oats (if you desire softer texture cranberries, pulse separately and hold aside to add after baking).  Pour this mixture also into the bowl with the oats.

Add to the bowl the final addition of ingredients, folding together to fully combine. Pour mixture into prepared baking pan, and spread out in an even layer -- do not compact.

Bake for 30 minutes, tossing with a fork at 10-minute intervals to ensure nuts do not burn.

Remove from oven, let granola cool completely in pan (add reserved cranberries if you chose to not bake them).

Crumble into clusters. Store granola in a tightly closed container(s), e.g., mason jar(s) at room temperature in a cool, dark place (1-2 months), or freeze for extended storage (3-6 months). Be sure to label and date each container/jar.

Serve as a cereal, layer in a parfait, or take it on the road with you as a 'trail-mix-type' snack. ~ Enjoy!

Tip:

*For larger clusters, simply add a bit more melted coconut oil where listed to do so in recipe.

SANDRA'S ALASKAN RHUBARB UPSIDE-DOWN CAKE ~ from scratch

Newly created recipe
thanks to my neighbor for providing me with fresh rhubarb and my sis Tina for the inspiration.

This is guaranteed to be my best recipe to date of the most
succulent, moist and flavorful homemade rhubarb cake, ever!

Servings: (9-12)
Prep: 15 Mins.
Bake: 25 to 30 Mins.

INGREDIENTS:

1st Layer: Rhubarb Mixture:
2-1/2 cups chopped fresh rhubarb (about 1/2" pieces; measure after chopping)
1/2 cup dark brown sugar
1 teaspoon freshly squeezed lemon juice
1/4 cup (1/2 stick) 1/2" cold unsalted butter cubed pieces

2nd Layer: Cake Batter:
--Wet:
1/2 cup (1 stick) unsalted butter (not margarine), at room temperature
1-1/2 cups granulated sugar
2 large eggs
1/2 cup mayonnaise
2 teaspoons vanilla extract
1-1/4 cups milk
--Dry:
1-1/2 cups all-purpose flour
2-1/2 teaspoons double-acting baking powder (or regular)
1-1/2 teaspoons baking soda
1/2 teaspoon salt

METHOD:

Preheat oven to 350 degrees. Spray a 9x13" glass baking dish; set aside.

Spread the rhubarb evenly over bottom of prepared baking dish. Sprinkle with brown sugar, drizzle with lemon juice, then dot with cold butter cubes.

In the bowl of a stand mixer (or hand mixer and large bowl), slowly beat sugar and softened butter for several minutes until light and creamy. Add the eggs, mayonnaise, vanilla extract and milk, then slowly beat to incorporate.

Sift dry ingredients through a sieve over wet ingredients in mixing bowl of stand mixer. Very slowly, pulse mixture to incorporate. Scrape sides of bowl and beat batter a final time.

Pour batter over rhubarb mixture in bottom of baking dish; spread batter out evenly using a spatula, then tap baking dish to level cake.

Bake for 25 to 30 minutes, until top is golden and a toothpick inserted in center comes out clean.  Let cake stand for 5 minutes on a cooling rack. Release sides with a knife before inverting onto a rectangle cake platter (or large baking sheet). Serve warm or at room temperature. ~ Enjoy!

SANDRA'S OLD-FASHIONED CHERRY PIE

One fabulous dessert that's not too difficult to prepare
and is so very, very satisfying!

Serves: (6 to 8)
Prep:
Bake: 45 Mins.

INGREDIENTS

Pie:
1-1/3 cup granulated sugar
1/2 cup all-purpose flour
3 (14.5 oz. cans) pitted red tart cherries, drained,
2 tablespoons unsalted butter
1 pkg refrigerated pie crusts (Pillsbury: 2 will be enclosed)

Crust topping:
2 teaspoons milk
1 teaspoon granulated sugar + 1/8 teaspoon ground cinnamon

METHOD

Preheat oven to 425 degrees. Set a 9" glass pie plate aside.

Lightly dust working surface with flour, gently unroll pastry, and use a rolling pin to slightly enlarge, just enough so pastry is a bit larger than pie plate. Repeat for top pastry crust.

In a large bowl, mix sugar and flour. Stir in cherries; fold to incorporate, and spoon into pastry-lined pie plate. Cut butter into small pieces; sprinkle over cherries.

Cover with top pastry. Brush with a pastry brush the inside of crust (not edges) with milk and sprinkle with cinnamon and sugar. Cut slits cut in top pastry crust; seal and flute.  Bake for 20 minutes. Remove from oven, cover edge with 3" strip of foil to prevent excessive browning; return to oven and continue baking for 25 more minutes, until golden brown and juice bubbles through slits in crust..

Cool on cooling rack at least 2 hours before serving with French vanilla ice cream. ~ Enjoy!

SANDRA'S EASY OUTSTANDING RHUBARB COBBLER

A wonderful recipe that's easy to prepare in which I used frozen rhubarb
 I thawed beforehand, so you're able to prepare this outstanding dessert year round!

Also, feel free to substitute rhubarb for apples using this same par-cooking method.

Or, changing it up using stone fruit or berries

without par-cooking prior to baking...

Servings: (8 to 10)
Prep: 15 Mins.
Bake: 50 Mins.

INGREDIENTS

Filling (Par-cooked before baking)
5 cups sliced, 1" pieces, fresh (or frozen rhubarb, thawed)
1 teaspoon freshly squeezed lemon juice

Batter
1 cup all-purpose flour
3/4 cup granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1 teaspoon double-acting baking powder (or regular)
1/2 teaspoon baking soda
1 large egg, beaten
1/2 cup evaporated milk (not sweetened)
1 teaspoon vanilla extract
4 tablespoons (1/2 stick) butter, melted

Topping
1/4 cup sugar
1 tablespoon cornstarch
1/2 cup hot water

-- Serve with a scoop of French vanilla bean ice cream or a dollop of whipped cream

METHOD

Preheat the oven to 350 degrees.

Par-cook rhubarb in the microwave in a glass bowl covered with a plate on high for 8 minutes. Drain through a sieve, without disturbing by pressing rhubarb pieces down. Place drained rhubarb in a sprayed, glass 9x9x2" baking dish. Drizzle with lemon juice, and set aside.

Meanwhile, in a medium bowl, whisk flour, 3/4 cup of the sugar, cinnamon, ginger, baking powder and soda. Switch to using a spoon then add beaten egg, milk, vanilla extract and melted butter; mix just until combined. Spread batter evenly over rhubarb mixture.

In a small bowl, whisk together 1/4 cup sugar and cornstarch. Sprinkle mixture over batter. Drizzle hot water over top of ingredients to fully cover.

Bake until golden brown for 50 minutes. Remove from oven and let stand on baking rack for 10 minutes.  ~ Enjoy!

SANDRA'S 10-APPLE NO-SHRINK DEEP-DISH ALMOND-CRUST PIE

By gently par-cooking the apples beforehand,
I've finally solved the problem of apples shrinking as they cook,
and therefore this method prevents leaving a gap between crust and apples
that have typically collapsed upon cooling...

Servings: (8-10)
Prep/Par-Cook: 30 Mins.
Bake: 65 Mins.

INGREDIENTS

Almond Crust
--(A hearty, darker, and super flavorful crust)

2 cups all-purpose flour
--plus extra for rolling
1/2 cup slivered almonds
1 cup cold unsalted butter, cut into 1/2" cubes
--plus extra for filling below
1/2 teaspoon fine-grain kosher salt
2 teaspoons light brown sugar
4 to 6 tablespoons cold milk
1 large egg, beaten

Filling
--(No shrink)

10 mixed apples (I used Granny Smith and McIntosh), washed, unpeeled, cored and cut into 3/4" pieces
1/2 cup granulated sugar
1/4 cup packed light brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon fine-grain kosher salt
1 teaspoon freshly squeezed lemon juice
1 teaspoon vanilla extract
2 tablespoons corn starch
--2 tablespoons cold unsalted butter, cut into 1/2" cubes
--1 tablespoon milk
--1 tablespoon turbinado sugar (sugar in the raw), or regular

METHOD

Prepare the crust in a food processor by combining flour, almonds, salt and brown sugar; pulse 4 times to mix. Add 1 cup butter cubes and pulse 8 times. Add sufficient milk, beginning with 4 tablespoons, pulsing until mixture pulls from edge and begins to solidify into a ball. Remove dough and place on lightly floured surface; divide in half, and form into 2 flat discs. Wrap each disc in plastic wrap and refrigerate 1/2 hour.

Preheat oven to 425 degrees, including placing a foil-lined baking sheet on middle rack in oven. Cut three 4" wide foil strips; set aside. Also, set aside a deep-dish pie plate. (I used a 10" diameter x 1-1/2" deep ceramic pie dish.)

Meanwhile, prepare filling by placing apple pieces in a Dutch Oven (or large heavy-bottom pot) over medium-high heat. Add sugars, ground ginger, cinnamon, salt, lemon juice, vanilla extract, and cornstarch. Using a wooden spoon, toss to combine. Cover Dutch Oven and cook for 10-12 minutes, while frequently stirring. Remove Dutch Oven from heat, and uncover to allow filling to gently cool while preparing crust.

Remove crust disks from the refrigerator, and roll out one at a time, on a lightly floured surface about 1/8" thick. Place bottom crust into pie dish, cutting any excess outer edge hanging over dish.  Roll out top crust using the same method.

Working quickly, add filling over bottom crust in dish. Dot with 2 tablespoons cold butter cubes, then push slightly under apples (so when butter steams while pie bakes it does not cause top of crust to separate from filling). Add top crust to pie, trim edges to 1/2"; pinch to flute and secure. Gently cover top of crust with a light coating of milk using a pastry brush, score a few decorative steam hole slits, and evenly sprinkle top with turbinado sugar.

Set pie on preheated baking sheet (to catch any juices that may escape from the pie while cooking). Bake at 425 degrees for 15 minutes. Pull pie from oven and line edges of crust with foil strips (to prevent over browning); lower the heat to 375 degrees and continue baking for an additional 45 minutes, turning once half way through baking. Remove pie from oven and cool on a wire rack for a minimum of 1-1/2 hours to set. Cut into wedges and serve with French vanilla bean ice cream. ~ Enjoy!

~~~~~~~~~~~~~~~~~~~
Tip: Feel free to peel the apples beforehand, although this unpeeled pie version adds more nutrients and fiber to its outcome, including doing so dramatically cuts down on prep time...
In a small, round, glass bowl, the second pkg. lemon jello; stir in 1 cup of boiling water to dissolve.
Separately drain the 3 cans of fruit through a sieve a medium bowl to drain; setting 3 different drained fruits in their own small bowl.  Roughly chop the bowl of peaches, then the bowl of pears.  Set 3 bowls of fruit aside.
Measure 1 cup of drained fruit juice mixture and stir into large bowl of lemon jello, then do the same adding a separate 1 cup of drained fruit juice mixture and stir into second small bowl of lemon jello.  Place both bowls of lemon jello into refrigerator to cool and slightly thicken for 1-1/2 hours.
Meanwhile, whisk the creamy layer mixture ingredients in a small bowl, and refrigerate until final assembly of dessert.
Sour cream tart crust:
2 cups all-purpose flower
½ cup sour cream
6 tablespoons unsalted butter, at room temp.
¼ cup craisins (dehydrated cranberries), chopped
2 teaspoons granulated sugar
½ teaspoon cinnamon
1 tablespoon cold butter cut into 16 small squares
Topping:
1 tablespoon milk
1 tablespoon granulated sugar
½ teaspoon cinnamon
Garnish:
Confectioners’ sugar, for dusting
Roll out the remaining dough on a lightly floured surface into a 13” circle.  Place into an 11” tart pan with a removable bottom; trim sides.  Roll out the other 1/3 of dough on a lightly floured surface into an 11.5” circle and cut into 1” strips.
In a medium bowl, combine all the filling ingredients, and spoon into prepared tart shell, then dot with cold butter squares.
Weave the lattice strips as shown in photo on top of tart, and trim sides.  Brush lattice strips with milk.  Combine the sugar and cinnamon in a small bowl, then sprinkle over lattice strips.
Place the tart pan on top of the hot pizza pan in oven, and bake tart for 45 minutes until light golden brown.  Cool 15 minutes on rack.  Remove sides and bottom of tart pan, and slide onto serving tart pedestal.  To serve, cut into triangles, and plate, then dust lightly with confectioners’ sugar. ~ Enjoy.
Place the orange juice, honey, cinnamon, and ginger in a medium non-reactive glass or ceramic bowl, and whisk to combine.  Add the remaining ingredients and toss to ensure all the fruit is coated in the orange juice mixture, and serve. – Enjoy!
Tip:  You need citrus juice to keep the bananas and pears from oxidizing.  Feel free to substitute the non-citrus fruit with melon, kiwi, peaches, apples, mango, papaya, and so on, including other berries as well.
SANDRA’S WHOLE CRANBERRY N’ FRESH ORANGE BREAD
I make this bread year round,
INGREDIENTS
2 cups all-purpose flour, sifted
1 cup granulated sugar
¼ cup dark brown sugar
1-1/2 teaspoons pumpkin pie spice
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon fine-grain kosher salt
1 large egg
1 tablespoon freshly grated orange zest
¾ cup freshly-squeezed orange juice (It turned out to be 2 medium oranges that I squeezed for juice; and 1/2 an orange zested)
2 tablespoons unsalted butter, melted
1 vanilla bean, split, and scraped to remove seeds
2 cups fresh or frozen cranberries
-- Cream Cheese, at room temperature (For spreading later on warm bread slices).
METHOD
Preheat oven to 350 degrees.  Spray a loaf pan, and set aside.  Take cream cheese out of refrigerator, and set aside to come to room temperature while loaf is baking.
Ready for the oven...
In a large bowl, beat egg, and add orange zest and juice, melted butter, and vanilla bean seeds.  Sift flour through a sieve into the large bowl, and add the remaining dry ingredients to wet ingredients, and stir just until moistened; batter will be rather thick.  Gently fold in cranberries. Spoon batter into prepared loaf pan.
Hot n' fresh out of the oven...
Bake for 1 hr. and 15 minutes, or until a toothpick inserted in center comes out clean. Cool in loaf pan for 15 minutes before removing and placing on a wire rack.
Tip:  This bread is fantastic when toasted, then spread with cream cheese as well.  Also, you are free to make muffins rather than a loaf, simply adjust your baking time accordingly.
*Tip: I freeze peeled, ripe bananas that I've cut into quarters in Ziploc bags. I use them often for frozen treats such as this, or for baking in recipes later on once thawed.
