SANDRA'S ALASKAN HALIBUT FRIED RICE

An incredible and  tasty one-pot-wonder that is quite versatile
in that you can change it up by substituting halibut with
shrimp, chicken, or pork, and so on..
.

Servings: ( 8 to 10)
Prep: 15 min
Cook: 10 min

INGREDIENTS

3 tablespoons canola oil, divided
3 eggs, lightly beaten
8 oz. fillet halibut, cut into 1" cubes
2 cups *pre-steamed carrots and sweet petite peas (See How To TIP below)
1/2 teaspoon ground ginger
1 teaspoon granulated garlic
1 tablespoon dried minced onion
Freshly ground pepper, to taste
5 cups cooked white rice
1/4 cup low-sodium soy sauce
1/8 teaspoon sesame oil
1/4 teaspoon rice vinegar

METHOD

In a Dutch Oven, heat 1 tablespoon of the canola oil over medium-high heat. Add the beaten eggs and stir fry, while breaking into large bits; remove to a plate. Wipe out pot clean, and add 1 tablespoon canola oil. Add the halibut, and stir fry until opaque. Remove halibut to same plate as eggs; set aside.

Wipe out the skillet, place it back on heat and add the remaining 1 tablespoon canola oil. Add the mixed vegetables, ginger, garlic powder, and dried minced onion, pepper and rice, and stir fry for 2 minutes. Add the soy sauce, sesame oil and rice vinegar; stir to combine, and continue cooking for another 2 minutes. Gently add back in the halibut and chopped egg and fold for another 2 minutes to combine and heat through. Serve immediately. ~ Enjoy!

Tip:

*PRE-STEAM VEGGIE PREP:

Finely dice the carrots to equal 1 cup. Add the carrots and frozen petite sweet peas to a microwave-able bowl with 1 tablespoon water. Cover bowl with a plate, and microwave on High for 3 minutes to pre-steam. Drain.

MAX’S MARVELOUS HALIBUT N’ CHIPS with a DIPPING SAUCE

Max’s ‘go-to’ amazing
recipe he prepares in 30 minutes -
it’s nothing short of incredible...
Servings (4)
Prep: 10 Mins.
Cook: 3 to 5 Mins. (Crinkle Fries: 26 to 28 Mins.)

INGREDIENTS

Chips:
1 (10 oz. pkg.) prepared Ore Ida Extra Crispy Seasoned Crinkle Fries

Sauce:
½ cup mayonnaise
½ cup ketchup

Halibut:
2 lbs. skinless and boneless halibut fillets cut into 3 to 4 oz. pieces
1 teaspoon old bay seasoning
½ teaspoon kosher salt
2 large eggs
1 tablespoon milk
½ of a (10 oz. pkg.) Seasoned Fry Mix for Seafood
Vegetable oil for frying

--1 lemon, cut into 8 wedges

METHOD

Preheat oven to 425, and prepare crinkle chips according to directions by baking for 26 to 28 minutes.

Meanwhile, add 1/2” vegetable oil to a large heavy-bottomed skillet, and heat to 350 degrees. 

Prepare the sauce by whisking the mayonnaise and ketchup in a small bowl, and set aside.

Evenly dust all sides of the halibut pieces with old bay seasoning and kosher salt.  In a small bowl, whisk the eggs and milk.  Add fry mix to a large Ziploc bag. Dredge halibut pieces in egg mixture, and then add and shake them in the fry mix in the Ziploc bag to coat. Place battered halibut pieces to skillet, avoid overcrowding, and fry for about 3 to 5 minutes while flipping half way through, just until golden brown (please do not overcook).  Remove and drain halibut pieces on a plate lined with paper towels.

Serve halibut pieces with a serving of chips, along with a couple of lemon wedges for squeezing over top of fish.  Place the sauce for dipping alongside in small ramekins. ~ Enjoy!


SANDRA’S QUICK AND TASTY CHICKEN FRIED STEAK

This recipe includes an egg dredge
spiked with Sriracha sauce that provides
an excellent flavor without being too spicy...

Prep Time: 10 Minutes
Cook Time: 10 to 14 Minutes

INGREDIENTS

2 (1” thick) steaks/fillets
--(of beef, venison, moose, buffalo, chicken, or turkey)
1 cup all-purpose flour
2 eggs
½ teaspoon Sriracha (an Asian hot sauce)
¼ teaspoon freshly ground pepper
¼ teaspoon kosher salt
½ teaspoon granulated garlic
½ teaspoon granulated onion
2 tablespoons olive oil

--Prepared potato salad

METHOD

Pound the steaks/fillets using the cuber edge of meat mallet to about ½” thickness (or we use our Cabela’s Manual Meat Cuber to do so that can be purchased online, so I used venison cubed steaks).

Place flour in a shallow bowl. Whisk together in a separate shallow bowl the eggs, sriracha, pepper, salt, and granulated garlic and onion.  Dredge each steak first in the flour, then in the egg dredge, and again in the flour. Pat the flour onto the surface of each steak so they are completely coated with dry flour.

Heat the olive oil in a nonstick skillet to medium-high heat.  Cook the steaks until evenly golden brown, 5 to 7 minutes per side, then serve with potato salad. ~ Enjoy!

Tips: I like to top my Chicken Fried Steak with A.1. Steak Sauce, while my husband prefers Ketchup, and these steaks are also wonderful drizzled with hot gravy and mashed potatoes as a side dish.

SANDRA’S RADIANT KIELBASA and BROCCOLI FRIED RICE

A complete, radiant,
and delicious meal you can
quickly prepare with leftover rice...

Cook:  15 Mins.

INGREDIENTS

2 eggs, beaten
½ lb. (1/2 ring) smoked kielbasa, cut into ½” cubes
Freshly ground pepper, to taste
½ cup chopped yellow onion
½ cup chopped celery
1 cup fresh broccoli florets, cut into smaller pieces
1 garlic clove, minced
Pinch of Chinese five spice seasoning
Pinch of ground ginger
4 cups prepared, steamed basmati rice
3 tablespoons low-sodium soy sauce


METHOD

Heat large nonstick skillet to medium-low heat.  Spray skillet with olive oil and add the beaten eggs; scramble, and remove to one side of a large plate.  Turn the heat to medium, and brown the kielbasa with freshly ground pepper, to taste.  Retain drippings in skillet, and remove the browned kielbasa with a slotted spoon to the other half of the plate (aside the scrambled eggs), and set aside.  Add to the skillet the onion, celery, broccoli florets, Chinese five spice, and ginger and saute until onions are translucent for about 5 minutes.  Add the garlic and saute 30 seconds.  Return the kielbasa to the skillet, along with the cooked rice, and soy sauce; mix to combine while sautéing for 5 minutes longer.  Add the scrambled eggs; folding to combine, then serve. ~ Enjoy!

INGREDIENTS

2 tablespoons light olive oil, divided
2 eggs
¼ cup yellow onion, diced
¼ cup celery, diced
¼ cup red bell pepper, diced
1 garlic clove, minced
¼ cup venison salami, diced
2 cups pre-steamed basmati rice
2 tablespoons ginger soy low-sodium sauce
¼ teaspoon freshly ground pepper

Garnish:
--1 green onion, sliced
--4 large cherry tomatoes, halved

METHOD

Heat a large skillet over medium heat with 1 tablespoon light olive oil.  Beat the eggs in a small bowl.  Scramble the eggs while breaking them up slightly, and set aside in a small bowl. 

Add the remaining 1 tablespoon of olive oil to skillet and heat to medium-high heat.  Add the onion, celery, and bell pepper to the skillet, and saute until onions are translucent, about 5 to 7 minutes.  Add the garlic, and saute for 30 seconds.  Add the diced venison salami, and saute for 1 minute.  Add the rice, and break it up to incorporate with other ingredients while sautéing.  Add the soy sauce and freshly ground pepper, and continue sautéing for a couple of more minutes.  Lastly, add the reserved scrambled eggs, and saute until warmed through.

Serve equally between two dinner plates, and garnish the fried rice with sliced green onions.  Place the cherry tomato halves along side – Enjoy!

so I just had to replicate them,

with Gruyere turned out identically yummy...

INGREDIENTS

Note: Allow mushrooms to come to room temperature for 30 minutes before cooking, as cold mushrooms tend to condensate upon removed from refrigerator.

2 lbs. medium button mushroom, stems intact, cleaned with a dry paper towel
--(batter does not stick to wet mushrooms, so do not rinse with water)
peanut oil, for frying
¼ cup gruyere cheese, grated (or swiss cheese)
1 teaspoon freshly chopped parsley

***Beer Batter:
2 cups all-purpose flour, sifted through a sieve
1 tablespoon baking powder
1 teaspoon kosher salt
½ teaspoon freshly ground pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon Italian herb seasoning blend
1 bottle dark beer, cold (I use Alaskan Beer ;-)

---Serving options:
-Lemon wedges
-Ranch dressing, for dipping sauce

METHOD

Place a ovenproof serving platter in the oven at 275 degrees to warm.

Pour about 2 inches of oil into a deep fryer or electric skillet, and heat to 375 degrees.

Meanwhile, make the beer batter by sifting the flour and baking powder through a sieve into a medium bowl. Add the kosher salt, ground pepper, garlic and onion powders, paprika, italian seasoning, and beer, whisking until smooth.

Don’t over crowd the pan, and fry in batches. Begin by ‘lightly’ dipping dry mushrooms into batter, then carefully immerse into hot oil. Fry the mushrooms for a total of about 8 to 10 minutes, flipping half way through, until they are evenly golden brown. Drain the mushrooms on a paper-towel lined plate.

Meanwhile, remove the warmed serving platter from the oven, and turn the oven up to 350 degrees. Place hot mushrooms on warm platter and sprinkle with shredded gruyere cheese. Place in oven for a couple of minutes, just until cheese is slightly melted. Remove from oven, and warn guests that the platter is hot, sprinkle with parsley, and serve with lemon wedges, individual forks and plates, and small bowls filled with ranch dressing for dipping. Squeeze lemon over mushrooms, eat while hot. ~ Enjoy!

Tip: Thinner batter makes for a lighter coating, and thicker batter makes for a heavier coating (all batter recipes may vary depending upon humidity in your area – so adjust to your liking by adding more beer to thin it, or more flour to thicken.) Also, this batter is very good for deep-frying onion rings and veggies, such as zucchini, broccoli, etc.

INGREDIENTS

1/2 lb. cooked and chopped (pork, poultry, beef, shrimp/prawns, or seafood)
2 tablespoons low-sodium soy sauce
1/4 teaspoon sesame oil
¼ teaspoon freshly ground pepper
2 tablespoons olive oil
2 eggs, lightly beaten
2 cloves garlic, minced
4 crimini mushrooms, thinly sliced
1/4 cup low-sodium chicken broth
+ an additional (2) tablespoons of low-sodium soy sauce
2 green onions, chopped
4 cups cooked white rice
Kosher salt and freshly ground pepper, to taste

METHOD

In a small bowl, season the pork with the 1 tablespoon soy sauce, sesame oil, and pepper.

Heat the olive oil in a large skillet over medium heat. Add the beaten eggs, and saute to scrambled point, and remove to plate and set aside.

Increase heat to medium-high heat under skillet (add more olive oil if need be), and saute garlic for 30 seconds. Toss in the pork (or meat or seafood), and mushrooms, sautéing until heated through. Stir in chicken broth, 2 tablespoons soy sauce, green onions, and rice. Cook and saute until the rice has broken apart and is evenly coated with the sauce. Pour the reserved broken scrambled egg pieces over rice, and toss to combine.  Taste for seasonings, adding kosher salt and ground pepper to taste, if needed - and serve.  Enjoy!
