SANDRA'S ROSEMARY-THYME-AGAVE NO-KNEAD OVERNIGHT CAST IRON BREAD

The best savory herb yeast bread that is so quick and easy to make...

Yield: 1 Loaf - (12 Servings)
Made with my fresh Rosemary (above)
and Thyme (below) plants...

Prep: 15 Mins.
Rise: 1 Hr.
Bake: 35 Mins.

INGREDIENTS

2 cups lukewarm water
2-1/4 teaspoons active dry yeast (not rapid or instant)
1 TB agave
4-1/3 cups all-purpose flour
1/2 tablespoon kosher salt
Mazola oil
1 TB chopped fresh rosemary (tender leaves only)
1 TB chopped fresh thyme (tender stems and leaves only)

Brushing (during and after baking):
2 tablespoons of butter, melted

METHOD

In a 2-cup glass measure, add 2 cups lukewarm water, yeast and agave; stir to combine and set aside to proof for 10 minutes.

Meanwhile, in a large bowl, add 2 cups flour and mix with kosher salt, rosemary, and thyme using a wooden spoon.  Add the proofing mixture and stir to combine, and then add the remaining 2-1/3 cups flour and stir to incorporate until mixture begins to form a ball. Cover with plastic wrap sprayed on the underside, and let proof for 8 hours (or overnight).

Oil a pre-seasoned 10" cast iron skillet on its inside bottom and sides; set aside.

Use Mazola oil to coat clean hands. Punch down dough, and it over on itself working from outside to center about 10 times. Pick up dough ball with oiled hands and form dough into a smooth ball by tucking edges underneath itself. Place into prepared 10" cast iron skillet, pressing it slightly toward the skillet edging.  Spray underside of plastic wrap, cover, and let proof for 1 hour (or until doubled in size).

Meanwhile, when there are 15 minutes left of proofing - preheat oven to 400F.

When 1-hour (or doubled in size) rising of loaf is compete, use a sharp knife to cut and 'X' 1/4" deep across the top of loaf.

Bake for 15 minutes, and removed hot bread to brush top evenly with melted butter.  Return bread to oven and continue to bake for 20 minutes longer (internal temp should be 192F).  Remove from and brush with melted butter a second time.

Let loaf rest 5 minutes in cast iron skillet. Use a knife to ensure edges are loosened. Flip bread out onto a baking rack, and turn right side up. Cover with a clean kitchen towel and let cool. ~ Enjoy!

Tip:

If you do not have fresh herbs and are intending on using dry:

--When converting fresh herbs to dry, it's 1TB fresh (or 1 tsp dry).

That is, 1 TB of fresh rosemary above would be converted to 1 tsp dry rosemary; same for the thyme.

Tip: When cleaning bread bowls and utensils used in preparing bread dough, soak them in hot water for 10 minutes beforehand. Do not use your kitchen brush, sponge or dishcloth; it will ruin them. Instead, use your fingers to do so. First, pour out hot water, then loosen the dough using your fingers and warm water. Then clean them with soapy water as usual.

SANDRA'S OVERNIGHT NO-KNEAD AGAVE ROSEMARY ARTISAN BREAD

The easiest bread recipe I've created to date,
and it's very versatile in that you can substitute the herbs,
i.e. instead of rosemary, use thyme, fennel seeds, etc...
Yield: 1 round loaf

Prep: 10 Mins.
1st rise: 9-12 Hrs.
2nd rise: 1-1/2 Hrs.

INGREDIENTS:

Wet:
1-1/2 cups warm water

1/2 teaspoon active/rapid dry yeast (not regular)
1 TB amber agave (or honey)

Dry:
3 cups all-purpose flour
2 teaspoons dried rosemary (not ground)
1-1/4 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper

--1 TB melted butter, (to brush top while hot out of oven)

METHOD:

Note: I proof my bread (let it rise) in the oven, no heat ~ A must in Alaska as this method provides for more of a consistent, non-draft environment.

Turn on pilot light in oven (no heat).

In a 2-cup glass-measuring cup, measure the warm water. Add the active/rapid yeast and agave, and stir to combine; set aside.

In a medium bowl, add the flour, salt, and pepper; whisk to evenly incorporate.  Add the wet mixture  and use a wooden spoon to combine, until the dough has pulled away from the sides and is somewhat shaggy.

Cover bowl with plastic wrap that has been sprayed on its underside.

Turn off pilot light in oven (no heat or light), then place the bowl of bread into oven to rise overnight.

The next morning, after 9-12 hours, remove the bread dough proofing in oven.

Turn on pilot light in oven (no heat).

Spray hands with oil and fold dough from outside to inner side (over on itself), working around in circles about 20 times.  Spray hands again, then place the dough ball into a sprayed 10" heavy round ceramic baking dish, Dutch oven, or cast iron skillet. Cover with plastic wrap with underside sprayed, then let rise for 1-1/2 hours, once again in the oven, turning off pilot light (no heat).

15 minutes prior to last rise, remove dough from oven to finish rising on counter top, then preheat oven to 450F.

After second rise is complete (the last 15 minutes) and dough has doubled in size, remove plastic wrap. Use a sharp knife and cut and 'X' on the top 1/4" deep to control its expansion area while baking.

Bake for 30 minutes, or until the internal temp reads 190F with an instant read thermometer.

Remove dough to a wire rack, brush with melted butter, then top with clean kitchen towels to cool.  You can either serve the bread warm or at room temperature.

Store leftover bread in an airtight container for up to 3 days, or refrigerate up to 5 days. ~ Enjoy!

Tips: If you like your bread with a crispy crust this is how it is when it comes out of the oven. If you like your bread with a softer crust, place it a plastic Ziploc bag and it'll soften overnight stored on the counter top.

Sandra's Sour Dough Starter
recipe
Dough:
2-1/4 teaspoons regular yeast
1/2 cup warm water
1 tablespoon agave
2-1/3 cups AP flour
1/2 cup whole wheat flour (or the same AP)
2 teaspoons kosher salt
--Herb Options: 2 tsp (more/less, to taste) finely chopped fresh rosemary
or 1 tsp dried (or any other herb you desire)

2 tablespoons melted butter, for brushing loaf halfway through baking, including when finished baking

METHOD

For the dough, in a stand mixer bowl fitted with a dough hook, dissolve yeast and 1/2 cup warm water, add agave, stir with a spoon and allow to proof for 5-10 minutes.

Stir in sponge, add AP flour (and whole wheat flour, if using), salt (and herb option(s), if using). Turn mixer on #2 to combine, increase speed to #3 and continue mixing until dough comes away from sides of bowl to form ball (adding additional water 1 TB at a time if needed, depending upon surrounding humidity environment). Continue to knead on #3 for 8 minutes.

Place dough on oiled plastic wrap. Clean mixing bowl, then lightly spray with canola oil, place dough ball back into mixing bowl and turn over to coat in oil all around. Cover with plastic wrap. Nest bowl on kitchen towels, both underneath and around it.  Let dough rise until doubled for 1-1/2 hours.

Turn dough out onto a lightly oiled surface; knead into a rectangle shape of your loaf pan. Let rest 5 minutes, then place in a sprayed, dark loaf pan, reshaping loaf a bit if need be. Cover with a clean cloth, and allow to rise until doubled, about 30-45 minutes.

Meanwhile, allow oven to preheat to 375 degrees at end of dough rising time. Set aside an instant read thermometer.

Bake for 15 minutes, removed par-baked loaf and brush with melted butter, then return to oven and continue baking 20 minutes longer, or until internal temperature reads 192 degrees. (Note: If using a light or glass loaf pan, cooking times will vary in that it'll take longer to bake and won't brown as nicely.)

Brush loaf final time with melted butter while loaf is hot and still in pan, slide a knife around edges to loosen, then remove loaf from pan to a rack on its side. Cover loaf completely with clean kitchen towels and let cool for a minimum of 2 hours before storing in a plastic bag.

Store at room temperature for 2 days, then refrigerate to store longer. ~ Enjoy!

SANDRA'S BASIL-ROSEMARY FOCACCIA BREAD - HOMEMADE

This is the basic recipe, and you can deviate to your heart's content
with herbs, and even add cheeses,
although no matter; it's a perfect sandwich  bread of all time...

INGREDIENTS

***Dough:
1-3/4 cups warm water
1 (4.25 oz. pkg.) active dry yeast
1 tablespoon granulated sugar
4 cups all-purpose flour, sifted
1 teaspoon fine-grain kosher salt,
1/2 cup olive oil

***Prep Dough for Baking:
1/4 cup olive oil
1/2 teaspoon organic dry rosemary
1/2 teaspoon organic dry basil
1/2 teaspoon medium-grain kosher salt

METHOD

To make the dough, combine the warm water, yeast and sugar in the bowl of a stand mixer, and let bloom for 8 minutes.  Fit the stand mixer with the dough hook.  Turn the mixer to low and slowly add one-third of the sifted flour, 1 teaspoon fine-grain kosher salt, 1/2 cup olive oil to the yeast mixture and allow to combine. Slowly add the remaining two-thirds of flour, and once the dough has come together; turn the mixer to medium low, scraping sides if need be - and knead for 8 minutes until dough becomes smooth and soft. Add a bit more flour if the dough is too sticky and tacky.  Spray the inside of a large bowl with olive oil, and place dough in bowl; turning over once to coat.  Cover with plastic wrap, and let rise in a warm and draft-free area (I do so in my oven, no heat, with just the light bulb on) until dough has doubled in size, about 1 hour and 15 minutes.

To prep the dough for baking, coat a baking sheet with half of the olive oil. Put the dough onto the baking sheet and begin pressing it out to fit the size of the pan. Turn the dough over to coat the other side with the other half of olive oil, and evenly sprinkle with rosemary and basil. Continue to stretch and spread the dough with your fingers to fit the pan. As you are doing so, spread your fingers in an outward motion and make finger holes all the way through the dough. (When the dough rises again it will look a bit craggy as it is supposed to).  Place the prepped dough, covered, in a warm place, until it has doubled in size, about 1 hour and 15 minutes.

Preheat the oven to 375 degrees.

Sprinkle the top of focaccia with medium-grain kosher salt, and a light drizzling of olive oil. Bake until focaccia is golden brown, about 20 minutes. Remove from oven, and let it cool before cutting and serving. - Enjoy as is, or use the focaccia to make your favorite Italian-Style Sandwiches!

SANDRA'S ROASTED UNCURED-BEEF BRISKET with ROSEMARY POTATOES

The best ever...
You should try this...
Servings: (6)
Prep: 15 mins.
Cook 4 hrs.
+ 3.5 hrs. for rub & standing time

Posted by Sandra

INGREDIENTS:

· 4 lb. uncured brisket

**Rub:
· 2 tablespoons flour
· 1 tablespoon chili powder
· 1 teaspoon cumin
· 1 teaspoon oregano
· 1 teaspoon basil
· 1/2 teaspoon dry mustard

***Roasting Sauce:
· 2-1/2 cups beef broth (plus more if needed)
· 1 cup tomato juice
· 3 teaspoons worcestershire sauce
· 2 cloves garlic, minced
· 1 onion, finely chopped

***Add 30 minutes before brisket is done:
· 2 lbs. ‘baby’ potatoes (or 1” cubed potatoes)
· 3 tablespoons olive oil
· 1 tablespoon rosemary

METHOD:

Clean and pat dry the brisket, trimming any excess visible fat and grey film.

Combine flour, chili powder, cumin, oregano, basil and dry mustard in a small bowl. Rub seasoning mix all over brisket, place in a large ziploc bag and refrigerate for 3 hours for flavors to penetrate, take out to return to room temp. for 30 minutes before roasting.

Meanwhile, in a small saucepan combine stock, tomato juice, worcestershire sauce, garlic and onion. Bring to a boil, reduce heat and simmer 15 minutes to reduce and enhance flavors. Remove from heat and allow to cool.

When brisket has returned to room temperature, in a dutch oven heat 2 tablespoons olive oil over medium-high heat, and brown the brisket on both sides. Remove dutch oven from heat and add the roasting sauce. Put brisket in the oven and roast, tightly covered at 325 for 4 hours, adding more broth as needed.

30 minutes before brisket is done, toss baby potatoes in oil and rosemary. Remove lid from roasting pan. Add potatoes, scattering them on top of the brisket. Add more broth until you have about 1.5 cups around the sides of the brisket. Continue to roast uncovered for 30 minutes to cook the baby potatoes (if using larger sized potatoes, increase cooking time accordingly). Poke potatoes with a toothpick to ck. tenderness.

Remove from the oven. Take brisket out of the pot and place on serving platter along with all the other ingredients, tent with foil and let brisket rest for 10 minutes. Take any remaining liquid and drippings in the Dutch oven and make gravy, adding more broth if need be. (I usually just add equal amounts of flour and water to jar fitted with a lid and shake it until smooth, then pour into roasting liquid and drippings in dutch oven until desired thickness of gravy is achieved), and pour gravy into serving container.

Slice the brisket against the grain and return to platter with potatoes. Serve it with the gravy, along with hot with rolls and your favorite vegetables. - Enjoy!

SANDRA'S SUGGESTIONS ON HOW TO FREEZE FRESH HERBS: The easy way and tips for using them later

I often find that I have an abundance of herbs at times,
and here is a quick method of freezing some of them
so you have use of your herbs year round...
Posted: by Sandra

This is so rewarding...

I often have to go to the market for just one herb while cooking a particular recipe. Further, I tend to never use all the herbs I purchase or grow, so this is the best method I found to preserve herbs is by freezing them.

Choose the best and healthiest, leaves, sprigs, or shoots of herbs: basil, parsley, thyme, chives, rosemary, etc., (See below).

Wash, and spin dry fresh herbs (or pat dry with paper towels).

Spread them out in one layer on a parchment paper (or wax paper) lined baking sheet. Flash freezing them flat and individually will prevent them from melding together later on.

Cover and place the cookie sheet of herbs into the freezer and freeze solid for a minimum of 24 hours.

Meanwhile, mark small Zip Lock bags with date/name of herb/amount/expiration date = up to 6 mos. When frozen, measure and place ¼ cup into individual bags, and to freezer.

If you freeze quite a few herbs, it may be easier to find them in your freezer if you store the individual packages of the same herb together in one large container.

[Be aware that when herbs are frozen, they become limp, lose their color and are best used in cooked foods, dressing, sauces, pesto, salsa, etc., although not as a garnish for instance.]

BASIL a natural snipped in with tomatoes; terrific in fresh pesto; other possibilities include pasta sauce, peas, zucchini, Italian toppings for brochettes

CHIVES dips, potatoes, tomatoes

CILANTRO Mexican, Asian and Caribbean cooking; salsas, tomatoes, salads, dips

DILL carrots, cottage cheese, fish, green beans, potatoes, tomatoes, dips

MINT carrots, fruit salads, parsley, peas, tabouli, tea, parfaits, desserts, drinks, garnish

OREGANO peppers, tomatoes, sauces, stews

PARSLEY The curly leaf is the most common, but the flat leaf or Italian parsley is more strongly flavored and often preferred for cooking. Naturals for parsley include potato salad, tabouli, green salads, sauces, soups, and stews, to mention a few

ROSEMARY chicken, fish, lamb, pork, roasted potatoes, soups, stews, tomatoes

SAGE poultry seasoning, stuffings

TARRAGON chicken, eggs, fish, salad dressings

THYME eggs, lima beans, potatoes, poultry, summer squash, tomatoes

WINTER SAVORY dried bean dishes, stews
