SANDRA’S KID-FRIENDLY DELICIOUS DORITO SHEPHERD'S PIE

Children simply love to help make 
and eat this dish - a great family bonding time..

Prep Time: 15 Mins.
Bake: 15 Mins.

INGREDIENTS

1 lb. extra-lean venison burger (or beef, buffalo, moose, elk, caribou, turkey, or chicken)
1 garlic clove, minced
½ cup green onions, sliced (reserve 1 tablespoon for garnish)
¼ cup orange bell pepper, finely chopped
1 (14.5 oz. can) chili beans, slightly drained (Recommend: Bush’s Best, Mild)
1-1/2 cups chili sauce
½ teaspoon chili powder
1 cup frozen corn kernels
1 (4 oz. can) mild chopped green chilies, undrained
2 cups prepared or left over mashed potatoes
1 cup medium cheddar cheese, shredded
1 cup nacho doritos, crushed

--1 tablespoon reserved sliced green onions for garnish

METHOD

Prepare two cups mashed potatoes, or use left overs.

Preheat oven to 350 degrees. Spray a 9”x9” square baking dish, and set aside.

Cook burger in a medium non-stick skillet over medium-high heat, stirring occasionally, until beef is ¾’s browned, and add the garlic, half of the onion (1/4 cup), and all of the bell pepper in a non-stick skillet over medium-high heat, stirring occasionally, until beef is fully browned (drain if not using extra-lean burger). Stir in beans, chili sauce, chili powder, corn, mild green chilies, and heat to boiling, cover, and reduce heat to low to simmer for 5 minutes.

If cold, heat mashed potatoes in microwave on high for 2 to 3 minutes.


Meanwhile, spoon the meat/bean mixture into prepared baking dish, spreading it evenly with the back of a spoon, and spoon the hot mashed potatoes on top onto center of beef mixture while leaving a 1.5” rim around outer edge of baking dish; sprinkle shredded cheese over potatoes and outer edge of beef/bean mixture.

Bake, uncovered, for 15 minutes, until bubbly and cheese has melted. Remove from oven and sprinkle crushed nacho doritos around outer edge of baking dish over meat/bean mixture, garnish with sliced green onions, and serve. – Enjoy!

Tip: You can also spread all the layers to the edge of the baking dish if you’re not worried about presentation appearance.

SANDRA'S CREAMY TOFFEE DIP with FRESHLY SLICED, SWEET APPLES

I had an abundance of fresh, quality apples
and came up with this recipe
because I'm crazy about toffee;
hence the dip creation...

INGREDIENTS

4 unpeeled apples, cored, and cut into ¼” slices

***Creamy Toffee Dip
1 (8-oz.) package cream cheese, at room temperature
1 (8-oz.) package toffee bits
3/4 cup light brown sugar
1/2 cup white sugar
½ teaspoon cinnamon
1 teaspoon vanilla extract

METHOD

In a medium bowl, beat with a hand mixer on low all the dip ingredients until well blended. Serve dip immediately in a nice serving bowl placed in the center of a decorative platter, and surround with sweet and crunchy apple slices.

Tip: This Creamy Toffee Dip can be stored in the refrigerator up to 5 days, just bring to room temperature to soften for easier dipping, about 30 minutes beforehand.

A simple, yet exquisite
blend of two ingredients
that incredibly go together beautifully...

INGREDIENTS

2 papayas
2 lemons

METHOD

Cut each papaya in half lengthwise, and remove inner seeds with a spoon then discard.

Cut each lemon in half and squeeze half of one lemon over each papaya section.

Scoop papaya fruit out with a spoon to eat the tasty flesh of this fruit – Enjoy!

A CREAMY ORANGE JELLO FLUFF DESSERT

I first had this by Mayor Powell's
mother in Yakutat who let me help her make it,
and have religiously made it since then...

INGREDIENTS

1 (3 oz. small box) orange jello
1 (16 oz. large tub) small curd cottage cheese
1 (8 oz. can) of crushed pineapple, drained
1 (8 oz. tub) of cool whip, thawed
1 teaspoon vanilla extract

METHOD

Drain the pineapple. Mix the cottage cheese and whipping cream together, until well blended; stir in the pineapple and vanilla, and mix well.

Stir in orange jello, mixing very well until you have a uniform pale-orange color. Chill for a minimum of 4 hours (this step is very important) prior to serving. - Enjoy!

Tips: I like to whip this up in the morning so it is ready to serve after dinner! Kids just love it – and it is also just as tasty alternatively using other citrus flavors of jello ;-)
