Bake Time: 45 Mins.
INGREDIENTS
2 large sweet potatoes, peeled and cut into 1” cubes
2 large carrots, peeled and cut into 1” chunks
1 tablespoon olive oil
1 tablespoon unsalted butter, melted
1 teaspoon freshly squeezed lemon juice
1/8 teaspoon ground cayenne pepper
1/4 teaspoon ground cumin
1 tablespoon dried cilantro
2 tablespoons quality maple syrup
Kosher salt and freshly ground pepper, to taste
Preheat oven to 350 degrees.
Place chopped vegetables and remaining ingredients in a
medium bowl; toss to coat. Pour mixture
into an 8”x8” casserole dish, cover, and bake for 45 minutes ~ Enjoy!
