SANDRA'S QUICK and EASY FRESHLY-MADE CROUTONS

These are so quick and easy to make and
are a wonderful addition to most
salads, soups, stews, and chowders.

Cook: 5 to 7 mins.

INGREDIENTS

3 cloves garlic, peeled, and cut into quarters
4 cups day-old bread, cubed
2 tablespoons parsley, very finely chopped
1/4 cup olive oil

METHOD

Heat oil in a large skillet over medium heat, add garlic and stir until lightly brown, and then remove garlic from pan. Add bread cubes to the hot oil. Cook croutons while turning frequently, until lightly browned. Remove from heat and toss in fresh parsley; mixing to coat. Remove bread cubes from oil, and season with salt and pepper to taste.

Tip: Feel free to add variations of freshly chopped herbs of your choosing during the end of the cooking process to compliment your accompanying entree.
