SANDRA'S HOT HAM and PARMESAN MINI FRITTATAS APPETIZER

A wonderful treat any time of day,
or at any function or gathering...
Yields: (about 20 mini frittatas)

INGREDIENTS:

4 eggs
1/4 cup milk
Ground pepper, to taste
¼ cup sliced smoked ham, chopped
2 tablespoons fresh parmesan cheese, grated
1 green onion, finely sliced

METHOD:

Preheat the oven to 325 degrees. Spray a mini muffin tins with nonstick spray.

Whisk the eggs, milk, and pepper in a medium-size bowl and blend well. Stir in the ham, cheese, and green onion. Fill prepared muffin cups almost to the top with the egg mixture. Bake until the frittatas puff up and are set in the center, about 8 to 10 minutes. Gently loosen frittatas from the muffin cups, and place them onto a platter. Serve immediately while warm. - Enjoy!

Tip: You can change this recipe up quite a bit by adding ½ slices of grape tomatoes on top, using different types of sliced meat/seafood/cheeses, and so on.

This is a great basic recipe to use and you can change it up with different ingredients, just maintain the ratio of the eggs to milk...yummmmm!
