SANDRA'S TERRIFIC TACO SOUP

Such comfort on a rainy day...been our favorite for years...
Servings: (8)
Prep: 15 Mins.
Cook: 30 Mins.

INGREDIENTS

1 lb. lean ground moose, venison, or beef
1 small yellow onion, chopped
1 medium carrot, scrubbed and grated
2 TB dry taco seasoning
1/2 TB chili powder
1 TB dry ranch seasoning
1 14.5-oz. can diced Mexican tomatoes, do not drain
1 14.5-oz. can chili beans, drained and rinsed
1 14.5-oz. can black beans, drained and rinsed
1 15-oz. can tomato sauce
4 cups water
1 tsp freshly squeezed lime juice
1 2.25-oz. can sliced black olives, drained (optional)
1 cup frozen corn kernels
1/2-1 TB diced jarred pickled jalapeƱos, depending on your desired spiciness

Toppings:
--Shredded sharp cheddar cheese
--Lime Crema (1 cup sour cream mixed with 1 teaspoon freshly squeezed lime juice and 1/4 teaspoon lime zest)
--Tortilla chips

METHOD

In a medium heavy-bottom saucepan, brown the burger over medium-high heat. Add the onions and shredded carrots and continue cooking for 5 minutes, while occasionally stirring. Add the remaining ingredients in order listed. Stir, bring soup to a boil. Cover, and reduce heat to low and allow to simmer for 20 minutes; stir occasionally. 


Ladle soup into serving bowls.


Top each bowl with shredded cheese and a dollop of lime crema, then place tortilla chips on the side. ~ Enjoy! 

SANDRA’S SMOKIN' BARBECUE BAKED BEANS

These Smokin' Baked Beans are a splendid
addition to any get-together, especially when
served with Orange-Mango Ribs 
and a side of Coleslaw...
Servings: (10 to 12)
Prep:  15 Mins.
Cook 40 Mins.

INGREDIENTS

12 ozs. thick hickory center-cut smoked bacon, cut into 1” thick strips
2 tablespoons bacon drippings
1 cup chopped Spanish (yellow) onion
2 cloves fresh garlic, minced
1/3 cup chopped orange bell pepper
1 diced fresh jalapeno, retaining ribs and seeds
2 (28 oz. cans) Bushes Orginnal Baked Beans
1 (14 oz. can) black beans, drained and rinsed
1-1/2 cups Bull’s Eye Original barbecue sauce
1 tablespoon molasses
¼ cup ketchup
2 tablespoons French’s yellow mustard
1 teaspoon smoked paprika

METHOD

Fry bacon slices in a dutch oven over medium-high heat until crisp, and remove with a slotted spoon to a paper towel-lined plate, then set aside.  Reserve 2 tablespoons of drippings. Saute onions, orange bell pepper, and jalapeno in reserved bacon drippings until onions are translucent.  Add the minced garlic and saute for 30 seconds.  Stir in beans, barbecue sauce, molasses, ketchup, mustard, and smoked paprika. Cover dutch oven and simmer over low heat for 30 minutes, while occasionally stirring.

Toss in the reserved bacon slices and stir to incorporate, then serve.  Enjoy!

SANDRA’S OLD-FASHIONED MEATY BOSTON BAKED BEANS

These old-fashioned meaty baked beans
are great with fresh cornbread,
and although you need to allow time
for soaking and simmering the beans,
this recipe is quite easy...
Servings: (6 to 8)
Quick Soak: 1 Hour.
Simmer: 1 Hour
Bake: 4 Hours

INGREDIENTS

1 lb. pinto beans
1 lb. venison/moose/beef, cut into cubes (I used venison)
1 onion, diced
2 ribs celery, diced
2 carrots, diced
1/2 red bell pepper, diced
2 garlic cloves, minced
1 bay leaf
1/3 cup molasses
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 teaspoon dry mustard
1 (15 oz. can) tomato sauce
2 tablespoons worcestershire sauce
1/3 cup dark brown sugar
Pinch of ground cloves
Pinch of ground cinnamon

METHOD

Sort and rinse beans, and ‘quick soak’ by covering them with 10 cups water in a dutch oven, bring to boil and turn off heat and let soak, covered, for 1 hour. Bring the beans to a boil once again in the same water, and reduce and let simmer for 1 hour.

Meanwhile, sear the venison in a skillet with olive oil over medium-high heat, and set aside.

Preheat oven to 325 degrees.

Add the remaining ingredients and seared meat to the dutch oven; stir to incorporate, cover, and bake for 4 hours, or until beans are tender.  Remove the lid about halfway through cooking to stir, and add more liquid if necessary to prevent the beans from becoming too dry.  Remove bay leaf, and toss. ~ Enjoy!

SANDRA’S IDEAL PEPPER-JACK CHEESE CORNBREAD

This sweet and moist pepper-jack-cheese
cornbread is a "must have"
with baked beans, chili, or soup...

Prep: 5 Mins.
Bake: 50 Mins.

INGREDIENTS

¾ cup unsweetened evaporated milk
¾ cup water
2 large eggs
1/3 cup vegetable oil
3 tablespoons unsalted butter, melted
1-1/2 cups all-purpose flour
2/3 cup granulated sugar
1/2 cup yellow corn meal
1 teaspoon double-acting baking powder (or regular)
1 teaspoon kosher salt
¼ cup pepper-jack cheese, finely diced

METHOD

Preheat oven to 350 degrees. Spray an 8”x8” square baking dish, and set aside.

Whisk milk, water, eggs, vegetable oil, and melted butter in medium bowl.  Whisk in flour, sugar, corn meal, baking powder, and kosher salt, just until combined.  Add pepper-jack cheese, and whisk to incorporate. 

Pour batter into prepared baking dish.

Bake for 50 minutes, or until wooden pick inserted in center comes out clean.


Cool in pan on wire racks for 5 minutes; cut into 16 squares and serve warm. ~ Enjoy!



SANDRA'S MOOSE SOS over STEAMED RICE with SAUTƉED GREEN BEANS

I grew up eating SOS and most
recipes I've tried from others in my hometown of
Yakutat, Alaska tend to be fairly similar -
simply a comforting soul food...

INGREDIENTS

1 pound lean moose burger
--(Or venison, beef, or buffalo)
½ red onion, chopped
2 stalks celery with tops, sliced
1 teaspoon garlic powder
1/4 cup all-purpose flour
1 cube beef bouillon
½ teaspoon kosher salt
¼ teaspoon ground pepper
2-1/4 cups milk
2 teaspoons worcestershire sauce
1 tablespoon dried parsley
--Par-steam, then sautĆ©ed Fresh Green Beans (Click here  for recipe: Sandra's Sauteed Fresh Green Beans)
--Prepared steamed rice

METHOD

Begin steaming rice so it is done the same time and the SOS and green beans.

Brown the burger ¾ the way in a large skillet over medium-high heat, add the onions and celery, and continue cooking until the onions are translucent. Add the garlic powder, flour, bouillon, kosher salt and pepper; stirring while sautĆ©ing until all the flour has been incorporated and the flour flavor has cooked out, about 5 minutes. Gradually stir in milk and worcestershire sauce. Bring all to a gentle boil, and reduce heat to medium-low to simmer, uncovered, while stirring occasionally until thickened, about 7 to 10 minutes.

To serve, place the SOS over steamed rice, and the green beans along side. – Enjoy!

SANDRA'S METHOD FOR SAUTƉED FRESH GREEN BEANS

Brilliant green and fresh
sauteed green beans...Yummm!

INGREDIENTS

½ lb. fresh green beans, trim ends, and cut into 1-1/2” pieces
¼ cup water
1 tablespoon light olive oil
½ teaspoon garlic powder
½ teaspoon onion powder
Kosher salt and freshly ground pepper, to taste

METHOD

Place the cut fresh green beans in a microwave-safe bowl with water, cover with a damp paper towel, and par-steam in microwave on high for 5 minutes. Drain, and rinse in a colander under cold water to retain color and to stop the cooking process, and then pat dry (this can be done ahead of time). Place olive oil in a medium skillet over medium-high heat, when oil is hot add the par-cooked green beans and spices, and saute for 7 to 10 minutes, just until crisp-tender. – Enjoy!

Tip: I have found that many like fresh green beans cooked longer until tender - not crisp, if so, you may choose to do so and continue sauteing for another 5 minutes.

SANDRA'S SEARED BRATS in BAKED BEANS with MAC N’ CHEESE and FRESH CORN

Some nights you just
need all these comfort foods

INGREDIENTS

***Traditional Mac N’ Cheese
2 cups uncooked elbow macaroni (I prefer the ones with ridges)
¼ cup unsalted butter
¼ cup all-purpose flour
½ teaspoon kosher salt
¼ teaspoon freshly ground pepper
¼ teaspoon ground mustard
¼ teaspoon worcestershire
2 cups milk
2 cups (8 oz) sharp cheddar cheese, shredded

***Seared Brats in Baked Beans
1 tablespoon olive oil
2 smoked brats, cut in half lengthwise, and then cut in half crosswise, and scored around edges (to prevent excessive curling)
1 (14 oz. can) Baked Beans (I prefer the Bush’s Original)
2 tablespoons red onion, finely chopped
2 tablespoons red bell pepper, finely chopped
1/8 teaspoon garlic powder

****Fresh Corn - (cut off cob)
2 ears of fresh yellow corn on the cob
1/2 teaspoon granulated sugar
1 teaspoon butter
kosher salt

METHOD

Preheat oven to 350 degrees.

Cook pasta as directed on package, (but a few minutes less so it is al dente, as it will continue to cook in oven).

While macaroni is cooking, make the cheese sauce by melting butter in 3-quart saucepan over low heat. Whisk in flour and continue cooking for 1 minute, add milk, salt, pepper, mustard and worcestershire sauce, and continue to whisk just until bubbles form, about 2 more minutes. Remove from heat, and stir in cheese with a spoon until melted. Drain macaroni and return to dry pot. Gently add cheese sauce over macaroni to incorporate. Pour macaroni/cheese mixture into an ungreased 9x9"x2” casserole dish. Bake uncovered for 20 minutes.

Meanwhile, start the corn on the cob boiling by covering with lightly salted water, adding sugar and butter, and then cooking, covered, for a total of 12 to 15 minutes.

Also, begin searing brats in a medium skillet over medium-high heat, until golden brown on both sides, and then remove to a plate, and set aside. Reduce the heat in the skillet to medium, and saute the onions, bell peppers, and garlic powder, just until the onions are translucent. Add the baked beans, and browned brats back to the skillet, and reduce heat to a low to simmer, just until the Mac N’ Cheese and corn are done.

Cut the corn kernels off of the cobs, and then serve up your dinner as shown in photograph. – Enjoy!
