MAX'S RED CURRY CHICKEN

 

Max says,
"This is the easiest, quickest and tastiest Red Curry Chicken recipe I have ever made"...

Servings: 4-6
Prep: 20 Mins.
Cook: 20 Mins.
 
INGREDIENTS:
 
2 tablespoons red curry paste
2 (13.6 oz.) cans unsweetened coconut milk
1 large chicken breast, cut into bite-size pieces
1 medium yellow onion, largely diced
1 carrot, sliced
3 ribs celery, sliced diagonally
¾ of a medium green bell pepper, diced
½ teaspoon garlic powder
1 tablespoon dried parsley
Kosher salt and freshly ground black pepper, to taste
 
--Prepared steamed rice for serving
 
METHOD:
 
If using, cook rice according to package directions.
 
Place all curry ingredients into a medium saucepan and bring to boil; reduce heat to low and continue cooking for 10 minutes, or until vegetables reach your desired doneness (Max likes his cooked about ½ way). 

Serve over steamed rice. ~ Enjoy!

SANDRA'S CHRISTMAS MORNING CASSEROLE

 
This was a new creation this Christmas Eve 'evening,' and
I baked the casserole off Christmas morning.

The husband had two helpings and I loved it as well, so this recipe
will be a new tradition as it's a keeper...

Servings: (8)
Prep: 20 Mins.
Bake: 60 Mins.
 
INGREDIENTS:
 
Layers:
2 tablespoons softened butter
7 slices whole wheat bread, cut into ½” cubes
4 slices cooked bacon, chopped into bits
 
Custard:
6 large eggs, beaten
2 cups 2% milk
1 cup shredded Mexican cheese blend
1 teaspoon dry mustard
½ teaspoon freshly ground pepper
 
Topping:
½ cup shredded Mexican cheese blend
1 large roma tomato, cut into 8 slices (reserve, will be added in the morning just before baking)
 
METHOD:
 
Using baking spray, spray a glass 9x13” baking dish; set aside.
 
Lay out the 7 slices of whole wheat bread and evenly spread one side with softened butter. Stack the slices and cut all into 1/2“ cubes.  Spread cubes evenly in the bottom of the prepared baking dish. Sprinkle the bacon bits evenly over the bread cubes.
 
In a large bowl, beat the eggs, whisk in the milk, 1 cup of shredded cheese, the dry mustard, and ground pepper until evenly combined. Pour custard mixture evenly over the contents of the casserole.
 
Top with remaining ½ cup of shredded cheese, cover with parchment then foil, and place in refrigerator a minimum of 8 hours or overnight.



In the morning, preheat oven to 350F.
 
Uncover the casserole and add the tomato slices on top (see photo).  Re-cover the casserole and bake for 45 minutes, turning halfway through this baking time.  Uncover and continue baking for 15 minutes.  Remove hot casserole to a baking rack to cool for 10 minutes prior to slicing and serving. ~ Enjoy!
 



SANDRA'S FAMOUS ALASKAN KING CRAB DIP for a crowd

The absolute best recipe, it's addicting and a great method in which to extend your
Wild Alaskan King Crab experience when its richness overcomes you...
Yield: (Appx. 2-1/2 cups)
Prep: 20 mins.

INGREDIENTS

2 cups prepared cooked, Wild Alaskan King Crab (knuckles and legs), shredded and cut into 1/2" pieces



3/4 cup whipped cream cheese
1/3 cup mayonnaise
1-1/2 teaspoon freshly squeezed lemon juice
1 teaspoon worcestershire
1/2 teaspoon granulated garlic
1/2 teaspoon granulated onion
1 teaspoon old bay seasoning
1/2 teaspoon seasoning salt (I used Johnny's)
1/2 teaspoon ground paprika
1/8 teaspoon ground cayenne
1/8 teaspoon freshly ground black pepper

Garnish options:
--Green onion (green parts only), finely sliced
--Paprika

Serving options:
--crackers
--whole wheat bread slices quartered
--cucumber slices
--celery stocks
--toasted baguette slices

METHOD

Combine all the above ingredients in a medium bowl, using a dinner fork. Cover and refrigerate for a minimum of 4 hours to allow the flavors to meld. Spoon into a decorative serving bowl, surrounding the bowl with a larger platter spread with your favorite snacking options (a few suggestions are listed above), then top dip with fresh, finely sliced green onions and a light sprinkle of paprika. ~ Enjoy!




SANDRA’S ALASKA SMOKED SALMON SUSHI SQUARES

An incredible salmon sushi
that is now my all-time favorite creation
and I'm positive most all of you will enjoy...

Yields: (4 Sushi logs, cut into 16 total squares)
Prep: 15 Mins.; plus preparing sushi rice ahead of time

INGREDIENTS

Sauce:
1 tablespoon mayonnaise
1/2 teaspoon Wasabi paste

Layers:
3 cups cooked and cooled sushi rice
--(Click here for recipe:  Sandra's Easy Sushi Rice)
Furikake Seasoning, optional
--(Japanese seaweed seasoning – See tip below)
1 (1/2-pint jar) smoked salmon sockeye strips, roughly flaked
8 thin strips red bell pepper
8 thin strips peeled celery
4 thin strips peperoncini (mild Greek green pickled jarred pepper)
2 sheets of Nori, cut in half lengthwise
1 tablespoon toasted sesame seeds

--Musubi-maker (See tip below)
--Scissors and a sharp knife

For serving (optional):
--Low-sodium soy sauce
--Wasabi paste
--Sliced pickled ginger

METHOD

Prepare sushi rice about 1.5 hours before you need it, as it has to cool down completely to absorb the sauce before you roll it into sushi squares.

Sandra's Easy Sushi Rice Recipe
In a small bowl, combine the mayonnaise and 1/2 teaspoon wasabi; set aside.


Start an assembly line on work surface to form salmon sushi squares by setting salmon, bell pepper, celery and peperoncini strips aside.  Set the sauce aside. Using scissors, cut 2 nori sheets lengthwise in half and stack them (dull side up), and set aside. Open furikake seasoning and sesame seed jars, and set aside. Place room temperature water in a small ramekin, and set aside.


To assemble, lay a halved nori sheet down, and place musubi-maker with the inside moistened with water (without the lid) crosswise over the middle of the nori sheet. Use a small spoon to place cold sushi rice into the mold (about 1/3 full with sushi rice when pressed). Use the musubi-maker handle (with the bottom moistened) to firmly press down on the rice. 


Spread the rice with a thin layer of sauce, sprinkle a thin layer of furikake; layer lengthwise ¼ of smoked salmon flakes, 2 strips of red bell pepper, 2 strips of peperoncini and 2 strips of celery on atop, and sprinkle with another thin layer of furikake, then another layer of pressed rice until the mold is about ¾’s full; pressing firmly with the moistened musubi-maker handle one final time.  





Hold the handle down with one hand, and use the other to pull the mold upward; hence un-molding the salmon sushi square log. 


Tightly wrap the nori around the rice, moisten where the edges meet on top, and gently press to adhere it. Repeat 3 more times.




Using a moistened sharp knife, cut each roll crosswise into 4 equal squares (wipe knife after each cut and dip into cold water), and plate sushi squares, then sprinkle each of them with sesame seeds. Serve at room temperature with soy sauce, wasabi and/or pickled ginger if desired. ~ Enjoy!

SANDRA’S EXOTIC CURRIED COCONUT CHICKEN

An incredible and delicious
chicken curry entree
that’s guaranteed
to warm your soul...
Servings: (6 to 8)
Prep: 5 Minutes
Cook: 1 Hour-20 Mins.

INGREDIENTS

Chicken Curry:
2 tablespoons extra virgin olive oil
2 tablespoons curry powder
1/2 onion, thinly sliced
½ red bell pepper, thinly sliced
2 garlic cloves, minced
Pinch of red pepper flakes
1 stick of lemon grass
--(or 1 teaspoon lemon grass paste)
3 boneless skinless chicken breasts, cut into ½” cubes
1 teaspoon kosher salt
1/2 teaspoon white pepper
Lemon Grass Paste
found in the produce
section of market
1 (14 oz. can) coconut milk (not lite, or cream)
1 (14 oz. can) diced tomatoes, with juice
1 (14 oz. can) tomato sauce
3 tablespoons honey

Side options:
--Prepared steamed Jasmine rice
--Prepared steamed broccoli

METHOD:

Heat olive oil and curry powder in a dutch oven over medium-high heat, and saute for 2 minutes.


Stir in onions and bell pepper, and saute until onions are translucent, about 7 minutes.  


Add garlic, red pepper flakes and lemon grass, and saute for 30 seconds. 


Add chicken cubes, kosher salt, and white pepper; toss to coat. Reduce heat to medium, and cook for 10 minutes, while occasionally stirring. 


Add coconut milk, diced tomatoes with juices, tomato sauce, and honey; stir to combine. 


Stir to combine, and bring to a gentle boil.  Reduce heat to low to simmer and cook, uncovered, while occasionally stirring for approximately 1 hour to allow sauce to reduce by half (from what's shown below) and for flavors to meld. 


(Meanwhile, prepare steamed jasmine rice and broccoli, if making.)

Toss stick of lemon grass (if using).

Serve curried coconut chicken over jasmine rice with steamed broccoli on the side. ~ Enjoy!


SANDRA’S BELOVED CHEESY SHREDDED POTATO-BACON BAKE

This entree of potatoes, cheese,
bacon and spinach is perfect for
brunch, a potluck, game day, or a quick,
colorful and flavorful dinner
with a salad...
Servings: (12)
Prep: 20 Mins.
Bake: 1 Hr.-15 Mins.

INGREDIENTS

Sauce:
4 tablespoons unsalted butter
½ white Vidalia sweet onion, diced
½ cup celery, finely chopped
1 garlic clove, minced
1/4 cup all-purpose flour
1 cup milk
3/4 cup low-sodium chicken broth
2 teaspoons worcestershire
½ cup mayonnaise
½ cup sour cream
Salt and white pepper, to taste

Other ingredients:
1 (1 lb.-4 oz. pkg.) refrigerated shredded real hash browns (I used Simply Potatoes)
1 (10 oz. pkg.) frozen chopped spinach, thawed, drained, hand-squeezed, and chopped finer
4 strips of bacon, sliced and browned
2 cups medium shredded cheddar cheese, divided

METHOD:

Preheat oven to 375 degrees.  Spray a 9”x13” baking dish, and set aside.

In a medium skillet, melt the butter over medium heat.  Add onion and celery and cook for 5 to 7 minutes until onions are translucent. Add garlic and cook for 1 minute.  


Whisk in flour, and cook for 1 minute. Whisk in milk, chicken broth, and worcestershire, then bring to a boil; reduce heat and simmer, stirring regularly, until desired consistency is achieved, about 10 minutes. 


Remove from heat, and fold in mayonnaise and sour cream to combine.  Add salt and white pepper, to taste.


Add shredded potatoes, spinach, bacon, and 1-1/2 cups shredded cheese to a large bowl.  


Add sauce, and fold mixture to combine. 


Spread mixture in prepared baking dish, cover baking dish with foil, and bake for 1 hour. 


Remove from oven.



Sprinkle with remaining ½ cup of cheddar cheese and bake, uncovered, for an additional 15 minutes.  


Let cool 15 minutes.  Cut into 12 equal squares, and serve. ~ Enjoy!

Tip:  This baked potato entree can be prepared ahead of time, such as the night before and refrigerated, and then baked the following day (just bring it to room temperature for 30 minutes prior to placing in oven).

SANDRA’S LUSCIOUS ALASKA DUNGENESS CRAB CAKES with SEAFOOD AIOLI

Simply put, this is another reason why I love living in Alaska! 
Yum...


Servings: (2)
Prep: 5 Mins.
Chill: 20 Mins.
Cook: 8 to 10 Mins.

INGREDIENTS

Seafood Aioli: (Yields ½ cup)
½ cup sour cream
¼ cup mayonnaise
1 teaspoon lemon juice
¼ teaspoon old bay seasoning
¼ teaspoon sriracha (Asian hot sauce)
Fresh-Cooked Lump
Alaska Dungeness
Crab Meat

Crab cakes:
¼ cup mayonnaise
½ cup Italian seasoned bread crumbs
¼ teaspoon old bay seasoning
¼ teaspoon garlic powder
¼ teaspoon onion powder
1 large egg, lightly beaten
1 teaspoons dijon
1 teaspoon worcestershire
¼ teaspoon sriracha (Asian Hot Sauce)
Pinches of fine-grain sea salt and white pepper
½ lb. cooked lump dungeness crab meat, picked over

--For frying:
----1 tablespoon vegetable oil
----1 tablespoon unsalted butter

Garnish:
1 green onion, finely sliced (green and white parts)

METHOD

Prepare steamed basmati rice, according to package directions (if using) beforehand.

Whisk the aioli (sauce) ingredients in a small bowl. Taste; add more sriracha sauce if you like it spicier.  Refrigerate for flavors to meld.  Store leftovers, covered, in refrigerator for up to 1 week.

Sandra's Creamy Seafood Aioli

Meanwhile, in a medium bowl, add all crab cake ingredients, except crab meat; mix to incorporate.  


Gently fold in the crab meat, just until incorporated. 


Shape mixture into four 1” thick crab cakes; transfer to a wax paper-lined plate.


Refrigerate formed crab cakes until firm for a minimum of 20 minutes, or up to 4 hours.

Heat oil and butter in a large cast-iron skillet over medium heat. Add crab cakes and cook until golden on bottom, about 4 to 5 minutes per side, for a total of 8 to 10 minutes. 


Transfer crab cakes to individual plates, and serve topped with Seafood Aioli and garnish with sliced green onions, with a side of steamed basmati rice drizzled with ginger soy sauce. ~ Enjoy!

SANDRA’S CREAMY SEAFOOD AIOLI

A perfect sauce to accompany
crab cakes, salmon patties, 
seafood appetizers,
pan-seared or grilled salmon,
halibut, and so on...
Prep: 5 Mins.
Yields: ½ cup

INGREDIENTS

½ cup sour cream
¼ cup mayonnaise
1 teaspoon lemon juice
¼ teaspoon old bay seasoning
¼ teaspoon sriracha (Asian hot sauce)

METHOD

In a small bowl, whisk all the ingredients. Taste, and add more sriracha sauce if you like.  Make ahead for flavors to meld, and chill leftovers in an airtight for up to 1 week.
