INGREDIENTS
2 large ‘ripe’ peaches, halved, and deseed (imperative they're ripe re: flavor ;-)
***Honey Butter Sauce
1 tablespoon unsalted butter, melted
1 tablespoon honey
1/8 teaspoon vanilla extract
1/8 teaspoon cinnamon
***Toppings
--french vanilla ice cream
--cool whip, (For my favorite, easy and quick fresh sweetened whipped cream – click here: Sandra's Perfect Fresh Whipped Cream)
-- drizzle with remaining Honey Butter Sauce
-- top with a sprig of fresh mint leaves
~Optional topping~
--Drizzle with a seedless raspberry sauce, for recipe – click here: Sandra's Fresh Raspberry Dessert Sauce)
METHOD
Heat an outdoor grill (or an inside grill pan with fan on) to medium-high heat. Prick skin sides of peaches with a fork. In a heatproof glass-measuring cup, add the butter and microwave for 30 seconds to melt. Remove, and then add the remaining sauce ingredients, whisking to combine, until honey is fully incorporated. Brush mixture over both flesh and skin sides of all peach halves, coating entirely (reserve remaining sauce).
Grill on both sides until fruit is tender, 5 to 7 minutes total (making quarter turns for ‘hatch’ grill marks on flesh sides). Serve warm, topped with french vanilla ice cream, and whipped cream, and then drizzled with a spoon the desired amount of remaining sauce, adding a spring of mint for color – Enjoy!

Tip: For more ‘scoop-able ice cream’ directly out of the freezer – microwave it for 10 to 15 seconds beforehand. Also, to prevent ice crystals from forming when placing ice cream container back in freezer – press plastic wrap or parchment paper directly atop the ice cream before replacing the cover!
